Cooking method:
1. Heat oil in a frying pan, add chopped garlic and onion. Reduce the temperature and cook for 5 minutes. Add thyme, wine and mussels. Bring to a boil, cover with a lid and simmer for 8-10 minutes. When the mussels open, they are ready. Strain and save liquid.
2. We put a pan with cold water and potatoes on the fire. Bring to a boil, then simmer for 15 minutes until potatoes are tender. Drain the water and leave for 3-4 minutes. Move to a large bowl. Add broth there and set aside.
3. In another bowl, add the ingredients - carrots, peas, peppers,onions, tomatoes, eggs and cucumbers. All of them must be cut into cubes. Add garlic mayonnaise. Remove shells from mussels and add to salad. Stir well.
4. When serving, lay out the potatoes on a plate, then put the salad on top with a spoon. Decorate with green onions.
Salad with mussels, baked peppers and ginger

For it you will need: ¾ cup of dry white wine, 1.3 kilograms of mussels in shells, 3 onions, cut into small cubes, ½ cup of fresh cilantro (cut some, leave some for decoration), 2 shallots, diced, 3 types of sweet pepper (yellow, red and green), cut in half and peeled, 20 grams of fresh minced ginger, 6 tablespoons of olive oil and 3 tablespoons of wine vinegar for dressing.
