Ingredients: half a cup of raspberries, 120 g of cottage cheese, 3 small Artek-type waffles, 3 tablespoons of condensed milk, chocolate and mint leaves for decoration.

Equipment and utensils: sieve, grater or blender, transparent glasses.

  1. Knead the cottage cheese thoroughly with a fork or wipe through a sieve. Add condensed milk and stir. The mixture should not be runny.
  2. Chop the waffles with a coarse grater. You can use a blender, but be careful not to make it too fine - no need to make flour out of the waffles.
  3. Pour the waffle crumb into two glasses. Top with raspberries until glasses are about two-thirds full.
  4. Dip your hands in boiled water, shape the curd into small balls and put them on the raspberry layer.

Snowballs with raspberry sauce

Ingredients: 1/2 cup raspberries, 1 egg, 1/3 cup milk, 10 tablespoons sugar.

Equipment and utensils: stove, pan, mixer.

  1. Choose a few raspberries and set aside. Mash the rest, put in a small saucepan, add 8 tablespoons of sugar and put the mixture on fire. Bring to a boil while stirring, remove from heat and leave the raspberry sauce to cool.

  3. Bring the milk to a boil and lower the heat to low.
  4. Scoop up the protein mass with a dessert spoon and put the resulting lump into boiling milk. Transfer the rest of the protein mixture into the milk in the same way.
  5. After the balls have sunk to the bottom, turn them over and cook for a couple more minutes.
  6. Spread the finished "snowballs" on plates and pour over the raspberry sauce, after adding the previously set aside berries to it.

Raspberry with chocolate and sour cream

Ingredients: 150 g raspberries, 100 g dark chocolate, a glass of 30-35% sour cream, 25 g butter, 1 tablespoon powdered sugar, mint leaves, nuts for decoration.

Equipment and utensils: stove, mixer, saucepan, transparent glasses.

  1. Grate the raspberries with a spoon and put in a glass to fill it by a third.
  2. Place mint leaves on top of raspberries.
  3. Beat sour cream with powdered sugar and fill the glass to two-thirds full with this mixture.
  4. Transfer the remaining sour cream to a saucepan, put on fire and bring to a boil. Add chocolate and stir until it dissolves. Remove the mass from the heat, add the butter, mix thoroughly, let cool. Then pour the mixture into a glass, filling the last third of it.

Ingredients: 300 g raspberries, 100 ml cream, 4 tablespoons semolina, 200 g sugar, 5 tablespoons powdered sugar, 600 ml water.

Equipment and utensils: stove, mixer or blender, refrigerator, bowls, saucepan, sieve or gauze.

  1. Mash the raspberries with a fork, then strain through a sieve or cheesecloth to extract the juice. Should be about half a cup.
  2. Pour water into a saucepan, place the mashed raspberries in it. Put on fire, bring to a boil, and let it cook for 3-5 minutes.
  3. Strain the decoction. The cake can be thrown away, and add sugar to the liquid, return to the fire and boil again.
  4. Addsemolina and, stirring, cook the porridge for 15 minutes.
  5. Remove the porridge from the heat and wait for it to cool.
  6. Pour raspberry juice into semolina and beat everything with a mixer until the mass increases and acquires the consistency of jelly. Pour the resulting mixture into bowls, but not to the brim, but leaving a little room for the cream. Place in refrigerator to set.
  7. Before serving, whip cream with powdered sugar. Ideally, they should thicken.
  8. Spread the second layer of cream and sugar over the cooled raspberry semolina.

Raspberry cream desserts

Dessert with raspberries and cream is another versatile option. The easiest way to indulge in this combination is to whip cream with sugar, put fresh raspberries in bowls and top with whipped cream.

But you can cook something more complicated. For example, the Italian dessert semifreddo.

Ingredients: 500 ml 35% cream, 5 eggs, 200 grams of sugar, 11 grams of vanilla sugar, orange or lemon jam. Raspberries are best added to taste.

Equipment and utensils: stove, saucepan, mixer, baking dish (but we will not bake anything!).

  1. Mix eggs, sugar and vanilla in a saucepan. Put the mixture in a water bath and beat for 5-8 minutes until the mass brightens and increases in volume. Then remove from the water bath.
  2. While the egg mixture is cooling, whip the cream until stiffpeaks.
  3. Combine the two masses and mix very gently but thoroughly.
  4. Add raspberries to the mixture: whole or pre-mash into berries in a puree - as desired.
  5. Line the mold with cling film. Put a small amount of jam on the bottom and add some raspberries. Spread the raspberry-cream mixture over the top.
  6. Cover the mold with plastic wrap and refrigerate for a few hours. Invert onto a large plate before serving. Cut the semifreddo into serving pieces.

Raspberry no-bake cake
