Test preparation process
Heat the milk to a boil in a smallsaucepan, stir in sugar, butter and s alt. With a sturdy wooden spoon, stir the eggs, yeast-water mixture, and half of the desired amount of flour into the warm milk mixture until evenly combined. Add the rest of the flour and stir well with a wooden spoon until the dough starts to fall off the sides of the bowl. You have to make it cool. Place the dough on a lightly floured surface. Dust your hands with flour and form the dough into a ball. Then lightly knead it for a while until a homogeneous mass and elastic consistency is formed. Lightly flour the top, cover with a clean cloth and let sit for 15 minutes.
You can freeze the prepared dough, and subsequently at any time make a roll for tea quickly. If you decide to start baking right away, proceed with the following steps.
While the dough is rising, cover a rectangular baking sheet with two pieces of aluminum foil - one crosswise, the other lengthwise. Brush the foil with melted butter. Prepare the filling.
Roll out the dough into a rectangle, brush it with melted butter. Apply a layer of filling, leaving 1 cm space around the edges. Starting on the long side closest to you, roll up tightly and press the edge firmly. Place the roll on the prepared baking sheet. Brush the top with the rest of the melted butter. Cover a baking sheet with plastic wrap and leave the dough in the room to stand quietly for a while to rise.
Then preheat the oven to 180 degrees. Bake the roll for tea until the top is beautifully browned, this will take 25-30 minutes. After that, remove from the oven and hold for five minutes, and then remove the roll from the pan by pulling on the ends of the foil. The finished product can be glazed before serving.
Possible toppings
Cinnamon-Pecan-Raisin: Mix 3/4 tbsp. granulated sugar with 1.5 tablespoons of ground cinnamon. Add mixture to 1/2 cup chopped pecan and 0.5 tbsp. raisins or dried cranberries.
Walnut Rice: Toss a cup of sweet boiled rice with 0.5 cups of crushed walnuts.
Lemon Cheese: Mix 400 grams of cream cheese with 3 tablespoons sugar, 1/4 teaspoon s alt, 1 egg yolk, a tablespoon finely grated lemon zest and lemon juice. Such a filling will make your tea roll especially tasty.
Glaze
Mix 1.5 tbsp. sugar, 2 tablespoons milk and 0.5 teaspoon vanilla extract in a small bowl. You can add more milk if the mixture is not homogeneous.

Ingredients for the dish:
- 1/2 tbsp. whole milk;
- active dry yeast (2 full and 1/4 teaspoon);
- 1/4 tbsp. sugar;
- 4tablespoons butter, slightly softened;
- 1 large egg yolk;
- 1 1/2 teaspoon vanilla extract;
- 2 3/4 tbsp. flour;
- 3/4 teaspoons tea s alt;
- 1/2 teaspoon grated nutmeg.
How to cook?
Heat a glass of water and milk in a saucepan over low heat to about 30 degrees. Remove the pot from the heat and add the yeast to the mixture, then sprinkle with a pinch of sugar. Leave for about five minutes.
Beat melted butter, egg yolk and vanilla with yeast mixture until smooth. In a large bowl, whisk flour, remaining sugar, s alt and nutmeg. Make a well in the center, then add the yeast mixture to it and stir with a wooden spoon. You should make a thick and slightly sticky dough. Transfer to a floured surface and knead until soft and elastic, about 6 minutes. Roll it into a ball.
Brush the inside of a large bowl with oil. Transfer the dough into it, cover with plastic wrap and let it rise at room temperature until it doubles in volume. This will take approximately a little over an hour.
Remove the dough from the bowl and knead again a little to remove excess air from it. Roll it back into a ball, butter a large piece of plastic wrap, and wrap it around a piece of dough. Place it with cling film in a bowl and refrigerate overnight (at least four hours).
