As an example, consider the simplest recipe for brass pies with cabbage.
This will require the following products:
For the test:
for 300 milliliters of kefir ½ cup of sugar, a teaspoon of s alt, 2 egg yolks, 300 grams of flour, 4 tablespoons of vegetable oil and ½ teaspoon of soda.
For stuffing:
carrots, cabbage, greens (dill), s alt.
For lubrication:
milk and egg yolk.
Preparing everything is very simple:
- To prepare the dough, combine all the ingredients and mix them well. Add soda and flour last. Roll the mass into a ball and immediately put in the refrigerator to ripen for 30 minutes.

- Divide the dough into pieces and roll each of them into a cake.

- Spread each semi-finished product with the prepared mixture.
- Cover a baking sheet with parchment and place the resulting blanks on it.
- Put them in the oven for half an hour, preheating it to 180 degrees.

Meat pies
In order for the product to be more airy, you can cook oven pies with dry yeast. In this case, it is better not to use liquid fillings.

for 370 grams of flour 1 onion, a teaspoon of s alt, 250 milliliters of kefir, 2 eggs, 10 grams of s alt, a tablespoon of sugar, 250 grams of meat, 100 milliliters of vegetable oil, 11 grams of yeast (dry, instant) and a little dill.
The cooking process will be slightly different:
- In a separate container, combine kefir, s alt, sugar, butter and yeast. Stir until sugar dissolves.
- Add flour and gradually knead the dough. Roll it into a ball, cover with a napkin and leave to ripen in a warm place for an hour and a half.
- Peeled onions with meat grind in a blender. To prepare minced meat, all that remains is to add an egg and chopped dill.
- Divide the finished dough into portions, and then form pies from individual cakes and minced meat.
- Smear semi-finished products with yolk using a brush for this.
- Place them on a baking sheet covered with baking paper and put them in the oven. Make sure that the temperature in it has already risen to 18 degrees.
Wind pies with dry yeast will be ready as soon as the appetizingcrust.

Many housewives love to pamper their household with pastries. To do this, you can use different recipes. For example, to cook wind pies with yeast, but not dry, but pressed. There are some subtleties here.

for half a liter of milk, 2 eggs, a kilogram of flour, 50 grams of yeast, a pinch of s alt, 70 grams of sugar and 20 milliliters of vegetable oil.

The cooking method is very similar to all the previous ones:
- Pour warm milk into a bowl. Put sugar, s alt, yeast there and leave for a few minutes.
- As soon as bubbles appear, add eggs and beat well.
- Introduce flour gradually, mixing thoroughly each time. Add butter last.
- Cover the dough ball with a towel and leave at room temperature for 1 hour.
- Divide the mass into parts and roll each into a ball shape. Leave on for 15 minutes.
- Grate apples and then mix with sugar.
- Knead each ball in the palm of your hand, put some apples on it, and then carefully wrap the edges.
- Place blanks on a baking sheet and brush with beaten egg.
- Send them to the oven for 40 minutes at 165 degrees.
Before serving, gently grease the finished pies with oil and let them stand for a while.
Unique dough
Some housewives don't cook pies, believing that a long fuss with the dough takes a lot of time. For them, you can offer an excellent option. It turns out that the dough for wind pies can be made in an accelerated way. And even without the use of eggs.
You only need:
for 4 cups of flour, half a liter of water (or milk), 2 tablespoons of sugar and vegetable oil, dry yeast (11 grams) and 5 grams of s alt.
The cooking method is very interesting:
- Pour flour into a clean dry container.
- Add s alt and sugar there.
- Make a well in the center and pour in the oil.
- Add water and mix everything.
- Make the final batch with your hands, and then wrap the ball tightly in cling film and put it in the refrigerator.
After two hours, the product can be taken out, but before starting work, it should be additionally kneaded with the addition of a small amount of flour. The pies should be tender, soft and airy. Moreover, this time you can take any filling.
