In the East, it is considered a true delicacy, since it has not only excellent taste properties, but is also very useful. The average "sea cucumber" weighs about 300 grams. Cucumaria can be either a completely simple, independent dish, or part of complex ones. Read below to learn how to cook cucumaria.
Risotto
You will need: 240 g arborio (rice), 140 g frozen cucumaria, 80 g shallot, 80 g celery, garlic clove, 160 g parmesan, 40 g carrots, 40 g butter and 50 ml olive, 380 ml red wine (dry), 50 ml tomato paste, 0.5 l broth (from homemade chicken), 5 g parsley, 4 stalks thyme, s alt and white pepper to taste.
And now - the cucumaria recipe itself. Two thirds of thawedthe pulp of the "sea cucumber" is cut into strips. Cut the remaining third into cubes. Slice carrots and celery. We chop the shallot. Fry all this, adding chopped garlic, half thyme and tomato (use only butter for frying). The fire should be as small as possible. The contents of the pan should simmer for 10 minutes, after which we add 60 ml of wine and cucumaria straws. Continue to simmer until the contents are reduced by half. Remove from heat and let the cucumaria brew (at least an hour). In the meantime, chop the remaining onion and thyme, fry them together with rice in olive oil. Pour in the remaining wine and evaporate again, adding cubes of cucumaria. In portions (be sure to evaporate each one), pour in the chicken broth. When it has evaporated, add the grated parmesan to the mixture. S alt, pour in the cream and remove from heat. It remains to arrange the risotto on plates and decorate it with herbs.
Meat platter
This cucumaria recipe is one of the easiest. It is also called a skewers with meat. The only negative is that it will take a long time, as it takes a long time to cook cucumaria. "Sea cucumber" will take at least four hours to cook. So, for the assortment you will need: 500 g of boiled cucumaria, 500 g of meat, a third of a glass of freshly squeezed tomatoes (juice), a whole large onion, garlic and your favorite spices (optional). If you already have boiled cucumaria, the preparation of the assortment will take no more than an hour. We cut the meat into strips, the onion into half rings. All this is fried (with constant stirring) for about seven minutes. The fire must besmall (so as not to burn). Now it's time for the meat. Cut it into strips in the same way (the same size as the cucumaria). Fry, put in a saucepan, add a tomato, a little water and simmer. The cooking time will depend on the meat itself: for young beef, an hour is enough, for pork - 40 minutes, for chicken fillet - 30 minutes.
The meat is stewed until it becomes soft. Now you can add the previously prepared "sea cucumber" and spices to it. All this is stewed for another three minutes. Served with both potatoes and vegetable salads.
Sea Cocktail Salad
People who love seafood will love it. It is prepared quickly, but the main thing is that it is very useful and in some cases acts like Viagra, since it contains a real mixture of aphrodisiacs. What will be needed? Seafood: shrimp (already peeled), mussels, squid, boiled cucumaria (200 grams in total), garlic (a couple of large cloves), medium onion, sweet pepper (whole), vinegar (two teaspoons is enough), a third of a glass of wine (only dry, white), the same amount of cream, a pinch of sugar, herbs, spices (optional), s alt, a little olive oil (for frying). How to cook? We wash the thawed seafood, let it drain. In the meantime, chop the onion, pepper and chop the garlic. Fry it together with onion and garlic (a couple of minutes, no more). We cut the seafood (so that the pieces are approximately the same), we also send it to the pan.
S alt, pepper, add sugarand wine, mix and simmer, uncovered, for five minutes. With longer heat treatment, squids will be tough. If you want to achieve a more delicate taste, try adding cream and a little soy sauce. However, this is a matter of taste.

Cucumaria meat itself takes at least four hours to cook. In order not to waste time each time, you can boil it once, in large quantities, and then divide it into parts and freeze. In this form, it is stored for about a month and does not lose taste and quality at all. You can make your own changes to each cucumaria recipe. Experiment!
