One of the undoubted advantages of this recipe is its availability. Most likely, you do not even have to go to the store, since you will surely find all the necessary products in your kitchen. To prepare the dough we need:
- oatmeal - 300-350 grams;
- wheat flour - 2 large spoons;
- eggs - 2 pieces;
- vegetable oil - 100 ml;
- sugar - 1 cup (can be replaced with 3-4 tablespoons of honey);
- soda - 0.5 tsp;
- lemon - a quarter of a teaspoon.
If you are fasting or are supporters of a vegan diet, you can slightly adjust the proposed list of components. So, eggs are easily replaced by two ripe bananas - they will act as a "fastener" in the dough. Instead of wheat flour, take the same amount of crushed (!) oatmeal or buckwheat flakes, add honey instead of sugar for sweetness - and your cookies will be a real standard of proper lean baking.
Preparing dough
It takes a lot of effort to ruin an oatmeal vegetable oil cookie. The recipe is so simple that even a child can cook according to it. We need two bowls. In one, mix oatmeal with vegetable oil and leave this mass to infuse for an hour. Separate the eggs into yolks and whites. We add the first to our oatmeal mixture along with sugar, soda and citric acid. Squirrelsbeat in a separate bowl in a dense foam.
Sift the flour and add to the main bowl, while carefully stirring the resulting dough. Then carefully pour the protein mass into the same place. Now you can turn on your imagination and add some zest to the dough. In our case, these will be nuts and dried fruits, there are many variations, so there is where to roam. For example, almonds and dried cherries, hazelnuts and raisins, cashews and cranberries, etc. are perfectly combined. Determine the amount of these components to your taste.
There is little left to do. Line a baking sheet with parchment paper and grease with vegetable oil. Spread the cookies with a spoon and send it to the oven (200 degrees) for 20-30 minutes. Ready!
