Different types of pie

Since the sweet melon mass is already completely ready for use, it can not be thermally processed at all. Or spend this stage in a sparing mode. Also, the fruit, due to its soft texture, is easily introduced into the dough in a mashed form, evenly distributed and giving the baking a wonderful honey flavor. A melon pie could be, for example:

- with fresh slices (garnish pastries on top or use raw as one of the layers);

- with candied fruit slices (boil slices in strong sugar syrup);

- with a soft mass as part of the dough base when baking (mash the overripe pulp or beat it with a blender).

Below are recipes with each oflisted options for processing "sunny" fruits.

Boiling and then light drying will turn melon pieces into candied fruits. How they turn out depends primarily on the duration of the heat treatment and the concentration of sugar in the solution used. In the event that it is very saturated, the boiled melon becomes like caramelized sweets. When cooled, such sweets are in many ways similar to marmalade. To prepare a melon pie, a gentle processing method is more suitable, when the slices remain semi-fresh. To do this, cut the fruit (not overripe) across into thick plates, remove the core with seeds and a dense skin along the outer edge with a sharp knife. Then divide the piece into four parts. Put the resulting bar across (“crusty” edge on a cutting board) and chop into slices no more than 1-1.5 cm thick. Blanch the “fans” prepared in this way in sugar syrup (1 cup of water per 1 liter) 2-3 minutes. Remove the slices from the solution with a slotted spoon and place on a wire rack or in a colander to cool completely. How to make candied melon pie? The recipe consists in a combination of several components of the dessert: biscuit cake, cream base, candied slices. Candied melons serve as a decoration for a layered cake. Arrange them as shown in the photo, and then decorate the dessert with cream.

Assembled cake with fresh melon layers

This recipe is somewhat similar to the previous one. A delicious dessert involves assembling a pie fromready-made cakes and raw melon mass. It is preferable to take the fruit fully ripe, with a honey taste. Prepare the slices as described earlier. Sliced slices do not have to be whole. You can also lay the melon on top of the biscuit or shortbread cake and cream mass in the form of small pieces. To make the dish light and not too sweet and sugary, use whipped cream. Before serving, such a melon pie must be kept in the refrigerator for 2-3 hours. Then the frozen dessert will keep its shape perfectly and be easily cut into portions.
