Making filo dough at home

Therefore, if you have time, then try to make filo yourself. There are many dough recipes, and some of them differ: somewhere, for example, they put eggs in it. So choose the recipe according to your taste. Here is one option.
To make the dough you will need:
- one glass of flour;
- about 2 tablespoons of sugar;
- half glass of water;
- a pinch of s alt;
- half a teaspoon of soda.
The cooking process is as follows:
- Heat water to 50 degrees and dilute s alt in it until completely dissolved.
- Sift flour into a convenient container, add s alt water and vegetable oil.
- Pour in soda.
- Knead filo dough carefully. Do not add more liquid - in the process of kneading the dough will reach the desired consistency. The finished dough should be elastic and not sticky to your hands.
- Divide it into several servings and beat each one hard.
- Roll into balls, cover with cling film and refrigerate for about one hour.
- Next, roll each piece as thin as possible.
- After that, the resulting sheets need to be stretched with your hands in different directions, but carefully so as not to tear. The dough should be paper-like, almost translucent.
- Place the finished sheets with parchment. If you are not going to freeze the dough, then roll it up neatly and put it under a damp towel, as it candry quickly and become brittle.
By the way, ready-made dough can be stored in the freezer for up to six months. Just don't freeze it twice as it will lose its properties.
Filo strudel with apples
To make this roll you will need about 20 filo sheets and about 1 kg of apples. In addition:
- lemon juice;
- dried berries or raisins optional - 100g;
- flour;
- butter - 150 g;
- sugar - 100 g;
- cinnamon - half teaspoon;
- icing sugar for decoration.
Total cooking time for filo strudel is about 40 minutes.
- Peel the apples, remove the core and chop finely. To prevent the apples from turning brown, sprinkle them with lemon juice, in addition, this will give the strudel a more refined taste.
- Soak dried fruits in boiling water for 10 minutes, finely chop if they are large.
- Sprinkle flour on the work surface so that the bottom layer of dough does not stick.
- Next, you need to melt the butter and, laying out the sheets of dough, grease them one by one. If you do not grease the sheets, the dough in the oven will dry out and be tasteless. Spread 10 sheets in this way.
- Sliced apples mix with dried fruits or berries, sprinkle with sugar and cinnamon. The mixture should be dry, without excess juice. Place half of the filling on the filo sheets and roll up, pinching the edges tightly.
- Spread the strudel on a baking sheet with the seam down. Repeat the procedure with the remaining sheets and the other half of the apple filling. Top both strudels again with butter.
- The oven must be preheated to 200 °C. Baking time - 20 minutes. Readiness of the strudel, look at the color - it should turn golden.
Let the roll cool slightly, then sprinkle with powdered sugar. Your phyllo strudel is ready!
Filo dough strudel with cottage cheese
Another version of strudel, no less delicious. To prepare it you will need:
- low-fat cottage cheese - 200 g;
- Filo dough - 20 sheets;
- butter - 150 g;
- yogurt - 3 tablespoons;
- vanillin - a pinch;
- sugar - 2 tablespoons;
- berries - optional.
- The recipe is similar to any other filo dough.
- You need to melt the butter and brush each sheet separately.
- For one roll, take 10 sheets.
- To prepare the filling, mix cottage cheese with yogurt (can be replaced with low-fat sour cream), mix thoroughly, add sugar, vanillin and berries. Beat the mixture with a blender until a homogeneous, tender mass is obtained.
- Put half of the mass on the oiled dough sheets. Roll up carefully and place on a baking sheet.
- Use the second part of the filling for the remaining 10 dough leaves.
- Preheat oven to 200°C. Bake the rolls for 15-20 minutes.
