Bake leg of lamb with vegetables
Usually lamb is not baked to the end. The meat remains a little pink inside. But this cooking method will make the lamb juicy and tender. If you want to get a similar result, then set the time to 1 hour 10 minutes. Fans of well-done meat should increase the baking interval to 2.5 hours. Of course, the time will depend on the size of the selected piece. The larger it is, the longer it will take to cook it. When choosing meat, give preference to young and lean lamb. Then the finished dish will turn out especially juicy and fragrant.
For this recipe you will need the following ingredients:
- leg of lamb weighing approximately 2-2.5 kg;
- a few cloves of garlic (about 10-12 cloves);
- a bunch of cilantro;
- s alt, freshly ground pepper of various kinds (white, black, pink);
- a few tablespoons of oil (sunflower or olive);
- potatoes small ormedium size total weight about 1.5kg;
- laurel leaves;
- a quarter of a pack (about 50 grams) of butter;
- cherry tomatoes - 10-12 fruits;
- foil and wooden skewers (toothpicks).
Cooking a leg of lamb in the oven
1 step
So, you should start with the preparation of meat. Thoroughly clean the foot from the films. Remove the skin from the garlic and cut each of the teeth in half. Wash cilantro, dry and cut into smaller pieces.

In the leg of lamb make cuts: vertical, a couple of centimeters deep. In each of them you need to place half a clove of garlic. Prepare a mixture of a spoonful of s alt, two tablespoons of pepper and the indicated amount of vegetable oil. Put a small amount of this mass into the cuts along with the garlic. Lubricate the leg with oil, rub with the remaining garlic mixture. Leave to marinate for half an hour. The meat will be saturated with the aroma of spices and spices.

Bake the leg of lamb in a large pan. It must be lined with foil in two layers. Tear off the required length so that the foil completely covers the leg. Now put the meat in the middle, wrap it well - the juice should not flow anywhere. We bake the leg of lamb for either 1 hour 10 minutes, or 2.5 hours - depending on what degree of doneness you like. The oven temperature should be around 180 degrees.

We roast the leg of lamb in the oven and prepare the garnish at the same time. Take a potato, peel it, boil it untilhalf-ready. You can add a couple of bay leaves and garlic cloves to the potato broth. This will make it more fragrant.

Heat two types of oil in a frying pan: vegetable and butter. Fry potatoes in it until golden brown. Pepper, add s alt.

Wash cherry tomatoes. Do not remove the stem from them, it will be an additional decoration for the dish. Take toothpicks or wooden skewers according to the number of prepared tomatoes.

After the meat is baked, you need to get it out of the oven and carefully open the edges of the foil. Insert skewers into the leg of lamb and place a cherry tomato on each. Now put the meat back in the oven without covering it with foil. As soon as the surface is browned (this is about 10 minutes), remove the leg of lamb. It is not necessary to keep longer, otherwise the meat will dry out.
8 step
Transfer the meat to a large dish. Wrap the bone in white paper. Pour lamb juice over potatoes, put around the leg. Decorate the dish to your liking (you can put greens) and serve. Eat hot lamb. Dry red wine is perfect with it.
