Any of us, picking up a caramel with the unusual name "Cancerous necks", at least once wondered, where did such an interesting name come from? After all, he, like the recipe, is over 100 years old, and these attractive sweets were invented by the famous confectioner A. I. Abrikosov in Tsarist Russia. So why are the candies called "Cancer necks"? These candies were similar in shape to individual pieces of the tail of a real cancer, in fact, this striking resemblance was the reason for the appearance of the name. AI Abrikosov was not only a talented inventor of confectionery recipes, he delivered his extraordinary sweets to the table of His Imperial Majesty, which spoke of boundless trust and the highest quality of the product.
Candy from the pharmacy
Initially, sweets were sold in pharmacies. Yes, yes, right there. Some of them included medicinal herbs, such as licorice, fennel or mint. These sweets were not onlytasty, but also useful. They could be used as a remedy for coughs or stomach pains. Over time, the annual turnover of the factory reached 1.8 million rubles, and A. I. Abrikosov opened his first company store.
Behind him - the second, and after a fairly short time, a whole network of his stores and wholesale outlets appeared. In addition to Cancer Necks and other types of caramel, unusually beautiful and enchantingly delicious sweets for balls and weddings were sold here, there was a large selection of gingerbread, biscuits, cakes and marshmallows.
Advertising is the engine of sales
AI Abrikosov strongly recommended all his products to his regular customers. He was very enterprising and invested a lot of money in advertising. I didn’t forget about the wrapper, because, in fact, this is the face of the candy.
And as you know, people are greeted by clothes, and how attractive the pattern on the wrapper could depend on the growth in sales of one or another type of sweets. But the recipe also meant a lot, in some types of sweets they added special ingredients that prevented them from spoiling quickly.
An unusual recipe for everyone's favorite caramel
So, Cancer Necks had a very interesting recipe. To make caramel, you need sugar and vanilla. It was glazed in a special way and added to the resulting mixture of potato molasses. It was made from raw potato starch and added to keep the caramel clear.
And so that the sweets are not candied, they used cremortartar. This is a tartaric s alt of potassium acid, or more simply, a sediment in wine barrels, which settled on the walls and crystallized. The filling of this product consisted of almonds, sugar, vanilla and dry maraschino fruit liqueur. Because of this, the sweets had a pleasant nut-cherry aroma and taste, crunched softly and pleasantly.
Serial production of sweets
A. I. Abrikosov's sweets were in great demand by the population of all ages. They were loved not only for the taste, but also for the appearance. Many sweets of that time had beautiful boxes from under such sweets. They were so colorful that it was considered blasphemy to throw away such packaging. Like it or not, the fantasy of the candy craftsman and his artists was truly limitless. The drawings on the wrappers sometimes struck with their beauty, made them smile and made them proud of their victories.
The factory produced separate series of sweets dedicated to different topics. So, according to the wrapper of the historical series dedicated to the war of 1812, one could learn about this or that battle. Or chocolate in honor of the inhabitants of different regions of Russia and the world with drawings of national clothes and life. Candy master A. I. Abrikosov did not ignore scientists, cultural figures, as well as famous artists of that time.
Global recognition
Advertising postcards or small posters were produced in a special edition. They were often depictedchildren with angelic faces or young, beautiful young ladies offering sweets, including Cancer Neck sweets. Postcards with various puzzles, puzzles or riddles were put into tin boxes. With this approach to business, A. I. Abrikosov quickly outperformed his competitors, production expanded, and income increased. Following the delicious caramel and marshmallow, Alexey Ivanovich decided to produce fruits glazed with chocolate.
Having moved to the Crimea, he left the production of sweets to his eldest sons. He himself took up the production of French delicacy, which subsequently won many awards. It was rumored that chocolate-glazed fruits were better than the original French ones and began to bring a stable and considerable income. So, thanks to his diligence and business acumen, the inventor of the Cancer Neck sweet became the main supplier of sweets to the table of His Imperial Majesty.
A. I. Abrikosov and Peter Bababev's factory
In general, AI Abrikosov was devoted to his family and work. But in addition to his direct duties, he supported commercial schools. It gave him considerable pleasure to look for capable and purposeful young people, to help those who needed not pity, but experience and knowledge. 17 children were born in the Abrikosov family. But, unfortunately, only one went in the footsteps of his father. And in 1918 the factory was nationalized by the Bolsheviks, and it got a new name - the Pyotr Babaev Confectionery Factory. But for a very long timeOn the wrappers next to this name there were brackets, which indicated - "former. Abrikosova." This invariably indicated the highest quality of the product. The sweets were so good that the assortment produced by the factory had not changed for the Soviet people for a long time. The recipes invented by the "chocolate and candy king" are so good that they have been used for the second century. A photo of Cancer Neck sweets from a hundred years ago is even now used in advertising.
