“Alfredo” is a pasta that has its own history. It was created several decades ago. The author of the dish is an Italian chef named Alfredo. One day his beloved wife fell ill. She lost her appetite. But the pasta, cooked in a delicate creamy sauce, brought the woman to her senses.
The cook was delighted with his wife's recovery. He began to cook this dish in his restaurant. From clients there was no release. Alfredo later started adding chicken pieces and other ingredients to the pasta. As a result, the dish became more satisfying. Now there are many variations of Alfredo pasta. Classic Alfredo Sauce
Required ingredients:
- Parmesan cheese - 80 g is enough;
- s alt - 1/3 tsp;
- 300g heavy cream (20 to 30% fat);
- black pepperin ground form - on the tip of a knife;
- 20 gram piece of butter.
Cooking:
- Pour the cream in the right amount into a deep saucepan. We reduce the fire to a minimum. We are waiting for the moment when the cream starts to boil.
- Add oil to the same pot.
- Let's get on with the cheese. The third part is left for sprinkling. Cut the rest into pieces and send to the cream and butter.
- Stir the ingredients in the pot. We got Alfredo sauce for pasta. Pour over cooked pasta. Mix thoroughly. We immediately serve the dish to the table, distributing it on plates.
Alfredo pasta with shrimps
Grocery set:
- ½ tsp each black and red hot pepper;
- 350g fettuccine paste;
- one onion;
- 1 bunch parsley;
- peeled shrimp (any, except tiger) - 750 g;
- heavy cream - 2 cups;
- 1 tsp dried basil;
- Grated parmesan - 1 cup;
- 50g piece of butter;
- garlic - 4 cloves will suffice.
Practical part
- Peel and chop the onion and garlic. We send it to a hot pan. Fry using oil. Sprinkle with red pepper. After 2 minutes, add already peeled shrimp. Fry, turning from one side to the other.
- When the shrimp get a nice pink hue, add 350 ml of cream to them. Waiting for whenthe liquid will start to boil. Turn off the fire.
- In a saucepan with heated s alted water, place the fettuccine pasta. Cook for 8-10 minutes.
- When the pasta is cooked, pour 300 ml of water into the bowl, in which it was boiled. We do not need the rest of the liquid. Drain it from the saucepan. Wash pasta in cold water. Next, send to the pan, where the dressing is located.
- Add the remaining 150 ml of cream. We cook the dish for another 10 minutes. Don't forget to stir.
- Sprinkle pasta with pepper and grated parmesan. We mix. Let's take 5 minutes. We decorate our dish with chopped basil and parsley. Fettuccine is served immediately after the cooking process is completed.
Pasta "Alfredo" with chicken
Product List:
- 2 tbsp. l. wheat flour and refined oil;
- garlic - one clove is enough;
- 90 g Parmesan and 3 tbsp. l. curd cheese;
- medium fat milk - 1 cup;
- 1 tbsp. l. butter and chopped parsley;
- chicken fillet - 2 pieces;
- 1 tsp each lemon zest and spices;
- 350g fettuccine paste;
- pepper, s alt to taste.
Detailed instructions
Step 1. Where do we start? Boil pasta in s alted water. This process will take 8-10 minutes. Pour water from the pan not into the sink, but into a separate container. We will still need it.
Step number 2. Cut the chicken fillet into pieces. Place in a hot skillet with oil. Fry5-7 minutes.
Step number 3. Melt a piece of butter in a saucepan. We put the grated zest and chopped garlic there. The frying time for these two ingredients is 20 seconds. We add flour. Fry for another minute, stirring with a spatula. Enter a glass of milk. This time we take a whisk in our hand. We will stir the dish with them. The next ingredient that will go into the saucepan is cottage cheese. Stir it until it dissolves into the sauce. Add 2/3 grated Parmesan. Stir again with a whisk.
Step number 4. Pour in the prepared Alfredo sauce. The paste must be hot. For a better "bundle" of ingredients, add ½ cup of water drained from the pan. That's not all. Put the fried chicken pieces in the pasta with the sauce. Mix gently.
Step number 5. We shift our dish into a deep warm plate. Sprinkle with the remaining amount of grated parmesan, chopped parsley or green basil. If desired, you can add pine nuts or peeled pumpkin seeds. But keep in mind: the calorie content of the dish will increase.
Note to housewives
- For pasta, we choose only pasta made from durum wheat. Otherwise, instead of a gourmet dish, you get porridge.
- Boil the pasta until al dente (until half cooked). How to check it? If when biting pasta is hard, and the tooth feels resistance, then it's time to turn off the fire.
- After cooking, heat the pasta in a frying pan. Then you can add Alfredo sauce. The paste will not stick together. So the dishwill look more aesthetic.
- Want a smoother sauce? Then refuse to use s alt, pepper and some spices. And for a spice, add a pureed garlic clove.
