  • orange peels - 1 kg;
  • lemon - 1/2 medium fruit;
  • water - 0.5 l;
  • sugar - 1.2 kg;
  • powdered sugar - 1 tbsp. l. (here the value is indicative, because the ingredient is used for sprinkling).

Steps of cooking candied fruits according to the classic recipe

Candied orange peels at home are prepared according to the following steps:

  1. Crusts that are available should be soaked in cold water. Thanks to this procedure, you can remove excess bitterness. Ideal if you leave the peels overnight, but the minimum required time for this is 5 hours.
  2. Soaked orange peels pour new water and send for cooking (set the fire to medium) for about 20 minutes. After that, put them in a colander and rinse well with running water.
  3. These procedures will greatly soften the white side of the crusts. Now it's time to cut off the white part with a sharp knife. The crust itself must be cut into strips, the width of which varies within 0.3-0.5 cm. Such sizes are considered optimal, since they canboil, and in the future it will be very easy to lay them out for drying.
  4. Recipe for candied orange peels at home in the usual conditions suggests that you need to prepare the syrup by boiling water with sugar for 8-10 minutes. Then add strained lemon juice.
  5. Put the chopped crusts into the prepared syrup, close the lid and cook over medium heat for about 20 minutes. Several times during cooking, you can mix the crusts with a spoon. After the time allotted for cooking, remove the pan from the heat and allow the crusts to cool. The best option would be if you leave them overnight. During this time, they will become translucent.
  6. Send candied orange peels at home back to the fire. This time you need to cook with the lid open over medium heat, stirring regularly. The star anise or vanilla pod added at this stage will help add sweetness and extra flavor. As a result, transparent pieces should remain that are soaked in syrup.
  7. Now it remains only to dry the crusts. To do this, lay the parchment on a baking sheet, and then carefully lay out the strips of crusts on it. It will take about an hour on medium heat. In this case, the oven must be ajar. You can dry without using the oven, just in the room, for 4-6 hours. It is very important not to overdry the sweets, otherwise they will become too hard.
  8. Put the finished candied fruits into a cup and sprinkle with powdered sugar. If you need to store sweets, it is better to transfer them to a jar that is hermetically sealed so that they do not becomestone.

Steps of making jam

The first step is to thoroughly wash the oranges. After that, remove the peels from the fruits and cut them into thin strips. We put the prepared crusts in a large bowl, into which we then add cold water. Soak for 24 hours, changing the water from time to time (here, the more often the water is changed, the better).

After this time, the white part on the crusts will soften, and it will need to be carefully cut off.

Each strip must be rolled into a spiral and carefully strung on a thread. Place such peculiar beads in a pot of ice water, and then send to the fire. Recipe for candied orange peel jamsuggests that at this stage they need to be boiled for 15 minutes over low heat. Then drain the water and fill with new. We follow the same algorithm three times.

With special responsibility, you need to take the preparation of the syrup, because the consistency of the jam depends on its consistency. So, if the syrup is too liquid, then you get candied fruits in compote. It will also be, of course, tasty, but not at all what was planned. And if you overdo it, you get candied fruits in caramel, which you will literally need to bite off from the can.

To do this, it will be enough to drop the syrup on a plate. It is worth focusing on the dryness of this droplet. That is, if you can put your finger on the drop and it remains dry, then the orange syrup is ready. You can turn off the fire, wait until the syrup cools down, and add lemon juice to it.

Prepared spirals need to be poured with syrup and sent to the fire. After the jam boils, you need to remove it from the stove, and after cooling, carefully pull it off the spiral threads.

Sterilize jars and pour candied orange peel jam into them. Sometimes such jam is brewed in small portions to make tea drinking more fragrant and tasty.
