Peach sponge cake
This cake is very easy to prepare, no fancy ingredients are needed. However, it turns out very tasty.
Ingredients:
- Eggs (it is better to take large ones) - 4 pcs.
- Sugar - 135 g.
- Flour - 135g
- Oil (refined vegetable) - 35 ml.
- Vanilla.
- Two tablespoons of boiling water (tablespoons).
For impregnation:
- Two tablespoons of cognac.
- Peach syrup – 75 ml.
Cream:
- Sour cream (at least 30% fat) - 350g
- Sugar - 155 g.
- Vanilla.
Filling - peaches (you can take fresh or canned) - 250 g.
Cooking sponge cake
So let's start cookingpeach cake. Beat eggs with vanilla and sugar. The mass should turn white and at the same time significantly increase in volume, as well as thicken. Without ceasing to beat, add two tablespoons of boiling water, and then slowly pour in the oil. The mixture should turn into a homogeneous lush mass, which will become not so thick, but very airy.
Then, sift the flour directly into the beaten eggs and gradually mix gently, starting from the edge and ending with the center. If the egg mass was well, properly whipped, then baking powder is not needed. Pour the resulting dough into a baking dish, which we first cover with baking parchment.
We send our biscuit to bake in the oven. At a temperature of 180 degrees, the base will be ready in half an hour. The finished biscuit should cool in the form, only then it can be taken out and cut into three cakes.
Creamy peach filling
To make the cake, we need impregnation. It is made from peach syrup and cognac. Cakes are processed with this mixture with a teaspoon.
Canned peaches should be diced. They must first drain so that the excess syrup is gone. Peach cake can also be prepared with fresh fruits, then the dessert turns out to be very tasty too.
Now you can proceed to the preparation of the cream. To do this, fat sour cream should be beaten with vanilla and sugar until strong peaks form. Sometimes sour cream purchased at the store stubbornly does not want to whip. In such cases, we recommendadd a special thickener for cream. Just carefully read the dosage on the sachet before use.
So, all the preparatory stages are over, you can start collecting the cake with canned peaches. On one of the soaked cakes, lay out half of all the chopped fruit. Next, apply a third of the cream of sour cream. Top with the next biscuit cake. Put the peaches again, cream and close with a cream biscuit.
Smear the finished cake on all sides with cream. We decorate as you wish. The top layer can be sprinkled with cocoa through a strainer, and sprinkled with white chocolate on top. Before serving, the cake should stand in the refrigerator and soak.

- Butter – 130g
- Flour - 0.2 kg.
- Sugar - 2 tbsp. l.
- Peaches - 0.4 kg.
- S alt.
- Water - 2, 5-3 tbsp. l.
The oven should be preheated to 200 degrees. Take the butter out of the refrigerator and let it warm up. Canned peaches should be pitted and cut into small pieces.
Put butter, s alt, sugar, flour into a saucepan. Knead the butter with a fork, and then mix with flour until obtainedbig crumb. Add cold water, quickly stir the ingredients and knead the dough. It will not be thick, but it should not flow either.
Cooking a baking sheet, cover it with paper. Spoon the dough onto the parchment paper. We level it so that the cake is no more than five millimeters thick. Put the peaches on the dough. Sprinkle the fruit with powder or sugar on top and bake for twenty minutes at 200 degrees. A thin layer of dough will bake quickly, and the peaches will be covered with caramel.

Ingredients:
- Sugar - 1.3 cups.
- Flour is a glass.
- S alt.
- Two squirrels.
- Vanilla.
- Eggs - 4 pcs
To make glaze:
- Spoon of sour cream (dining room).
- Two tablespoons of cocoa (tablespoons).
- Butter – 35g
For stuffing:
- Two tablespoons of flour (tablespoons).
- Two yolks.
- Seven tablespoons of sugar (tablespoons).
- Glass of milk.

Step by step recipe
Four eggs beat in a steep foam, add a glass of sugar, vanilla and flour. Whisk again. Pour the resulting dough into a mold with parchment, set to bake for twenty minutes at 200 degrees. We take out the finished cake and cool it.
The temperature in the oven must be lowered to 140 degrees. Beat egg whites to stiff peaks with 1/4 cup sugar and s alt. The resulting mass is transferred to a culinary bag. Next, on a baking sheet with parchment, squeeze out smallballoons. We bake them for an hour and a half.
Peaches should be washed and cut, then put in a saucepan, sprinkled with two tablespoons of sugar and boiled over low heat for twenty minutes. Remove from heat and rub through a sieve.

Half of the finished meringue should be laid out on the bottom cake, covering it on top with the second, smearing with cream. Put the rest of the meringue on top.
Next, prepare the chocolate icing. To do this, mix sour cream, cocoa and sugar. Place the saucepan over low heat and bring to a boil, stirring. Remove from heat, add oil and stir again. The top of the cake is sprinkled with icing.
