What udon is made of

Udon is a type of national Japanese noodles, which are used in the production of 3 components: wheat flour, water and s alt. Its feature is the complete absence of eggs. Long noodles with a diameter of 2–4 mm are drawn from the dough prepared from the listed ingredients. The color of the noodles depends on the quality of the flour used and can be white or off-white. The finished noodles are soft andelastic.

Udon is used to prepare both first and second courses. Noodles can be served hot, but their great taste is preserved even cold. It is often cooked with various types of meat, seafood, vegetables, and seasoned with dark or light soy sauce.

For 3 servings you will need the following products:

  • Udon noodles -300g
  • Chicken fillet - 250g
  • Mushrooms, preferably champignons - 200 g.
  • Beijing cabbage - 60g
  • Bulgarian pepper - 150g
  • Zucchini - 150g
  • Onion - 100g
  • Carrot - 1 root vegetable.
  • Potato starch - 6 tbsp
  • Vegetable oil - 100g
  • Garlic - 1 clove.
  • Soy sauce - 100 ml.

Cooking steps:

  1. Chop cabbage, zucchini, onions, peppers and carrots into thin and long strips.
  2. Mushrooms cut into large cubes.
  3. Cut the chicken fillet into small strips, breaded in starch and quickly fry in a saucepan with vegetable oil over high heat.
  4. After the fillet is browned, add prepared vegetables to it, except for cabbage. Fry them together with chicken, do not reduce the fire andtake care not to burn. Bring vegetables to half-cooked.
  5. Last add cabbage and pre-cooked udon noodles. Mix the cooked dish well and remove the saucepan from the stove. Add soy sauce, stir again.

Yaki udon tori (udon noodles with chicken and vegetables) turned out great. It remains to put the cooked noodles on plates and serve the dish on the table. The Japanese eat udon with chopsticks, but you can also use a fork.

If you didn't have champignons on hand, oyster mushrooms or dry shiitake mushrooms may well replace them. We advise you to decorate the dish with cilantro or sesame seeds.

To make delicious chicken and vegetable udon and surprise your family with an unusual Japanese dish, follow these tips:

  • It is best to boil the noodles in chicken broth - this way they will get a rich flavor and not be watery.
  • Don't boil udon for too long - it will stick together and lose its shape, it will look like porridge.
  • Teriyaki sauce can be used instead of soy sauce.
  • To prepare second courses, udon should not just be boiled, but additionally fried until golden brown, about 7 minutes.

Chicken and Vegetable Udon Recipe 2

Ingredients (serves 4):

  • Chicken fillet - 700g
  • Carrot - 1 root vegetable.
  • Wheat udon noodles - 350g
  • Green onion (stems) - 40g
  • Canned corn - 70g
  • Teriyaki sauce - 200 ml.
  • Soy sauce - 70 ml.
  • Sesame seeds - 15g

How to cook:

  1. Chicken fillet cut into medium-sized pieces. Fry the fillet in a pan with vegetable oil, do not s alt, the fire should be strong. After the formation of a golden crust, add the teriyaki sauce and continue to fry the fillets over low heat.
  2. Chop the carrots and peppers finely, then add to the chicken, pour in the teriyaki sauce. Continue frying.
  3. Pre-boil udon noodles.
  4. In a pan with chicken and vegetables, put udon noodles, add corn, chopped onion. Top with teriyaki sauce if needed. Stir the cooked dish thoroughly.

Serve ready-made udon with chicken and vegetables on portioned plates, sprinkle with sesame seeds on top.
