Italian cuisine is one of the most well-known and beloved, especially pasta and various pasta seasonings. Carbonara sauce can be considered one of the foundations. Preparing it is quite simple, does not require too much money. There are different recipes: carbonara sauce with and without cream, with garlic, from different types of brisket, with black pepper, with pancetta, etc. Each person chooses according to his taste, according to his preferences. There are many options for how to make carbonara sauce, but for now we will focus on a more traditional and tasty one. Products we need:
- Smoked brisket - 250 grams.
- Cream – 200 ml.
- Eggs - 5 pieces.
- Parmesan - 150 grams.
- Garlic - 1 clove.
- Spaghetti - up to you.
- Black pepper - to taste.
- Olive oil - 3 tablespoons.
Let's start by cutting the ingredients. Instead of smoked brisket, you can use pancetta for sauce. In Italian cuisine, it is a type of bacon made from a special breed of pig. Pancetta is a piece of fatty pork belly cured in spices, herbs and s alt. At the same time, insome Italian areas use rosemary and sage. Smoked brisket or pancetta should be placed in the freezer before cooking so that it freezes slightly and is easier to cut. Large or small pieces to do, depends on your desire. Then the Parmesan cheese will need to be grated, preferably fine. Break the eggs and separate the yolks from the whites. Beat the first with a whisk and set aside for a while. In the meantime, boil the spaghetti in water with s alt until they are still slightly firm (they will soften later in the hot sauce). Pour olive oil into a frying pan and fry the brisket, already chopped by us, in it. Then add finely chopped garlic to it. You can put pepper or not, as you like.
In a saucepan separately, the cream must be heated, add the cheese, and then pour in the yolk. All this is well mixed. Next, spaghetti, already boiled, must be placed in a colander, drain all the liquid and return to the hot saucepan. We also place the brisket, garlic and a mixture of yolk, cheese and cream in it. Then we close our brew with a lid and shake all the contents or mix vigorously.
Now let's learn how to make mushroom carbonara sauce. For it we need the following products:
- champignons - 20 grams;
- spaghetti - 200 grams;
- cream - 200 ml;
- bacon - 100 grams;
- egg yolks - 2 pieces;- parmesan - 100 grams;
- ground blackpepper - to taste;
- olive oil - 1 tablespoon;
- s alt - a couple of pinches.
Boil spaghetti, cut bacon into small pieces. We also cut the washed and peeled mushrooms, three cheese on a grater. Heat the oil in a frying pan and fry the bacon and mushrooms in it. Beat the yolks with cream a little, adding pepper, s alt and cheese. All this, after mixing, add to the bacon with mushrooms. Bring the sauce to a boil over low heat, stirring constantly. When the carbonara sauce is ready, combine it with spaghetti, mix and turn off the stove. It's time to serve the dish to the table.
A properly made sauce is silky smooth and very tasty. When the pasta is ready, put it on a plate and sprinkle with freshly ground pepper. You can also add roasted garlic to the creamy sauce, if desired. But first you need to knead it into a pulp. Garlic will give a wonderful aroma. Enjoy your pasta and carbonara sauce.
