Our ancestors were well aware of the healing properties of raspberries. And for the treatment they used the whole plant: flowers, leaves, berries, roots. Now, most often, the matter is limited to harvesting berries. They make jelly, everyone's favorite homemade raspberry jam, confiture and even wine. Raspberries, unlike most berries, do not lose nutrients during heat treatment and, when processed, retain all the medicinal properties of fresh fruits.
How to make raspberry jam?
Raspberry is a very delicate berry and is not stored fresh for a long time. In ripe fruits, after being in a sealed container, wine fermentation begins after 6-7 hours. Therefore, the harvested crop must be sorted out, the damaged and unripe berries should be put aside. Boil raspberry jam in small portions (ideally 700-800 g each) over low heat. This amount makes about a liter jar.
Quickraspberry jam
A couple of kilograms of berries carefully divided into about 3 parts in separate saucepans. Pour 1:1 into each sugar. If you like sweeter and thicker jam, then you need to take a little more sugar. Leave the saucepans alone (you can send them to the refrigerator) until a sufficient amount of juice is released. Now immediately - on fire, as soon as it boils, withstand a couple of minutes. Pour into sterile dry jars (under the very lid) and seal.
Jam in the slow cooker
Jars for the finished product and lids can also be sterilized in a slow cooker. Place a container for steaming on the bowl, place jars and lids on it and set the appropriate mode, the time is set automatically. During this time, prepare a kilogram of berries: select strong and whole, remove sepals and crumpled fruits. Gently pour them into a slow cooker, and on top - a kilogram of sugar. Set the "Extinguishing" mode for an hour. After half the time, mix the contents of the bowl gently. After a beep, pour raspberry jam into prepared jars, cork with lids. You will get a little more than two jars (750 g each).
Preserve raspberries without boiling
Very simple and quick recipe. Beat the prepared kilogram of raspberries in a blender until homogeneous. Pour a pound of sugar, pour 5 tbsp. l. good vodka, mix thoroughly, transfer to jars, store in the refrigerator. Only it won’t be possible to save for a long time: a delicious preparationvery quickly eaten!

Preparing also without much hassle. Pass prepared berries through a juicer. Add half a kilo of sugar to each liter of juice, stir, put on the stove, let it boil, pack in jars.

If you want to treat yourself to such an exotic drink, you will have to sacrifice a kilogram of cooked jam, but it's worth it! Pour a kilogram of sugar, a glass of unwashed rice into a 5-liter jar, add jam and pour water up to the shoulders. Let stand in a warm place for 40 days, but the more it costs, the tastier and more aromatic the final product is. Pour the strained wine into bottles. Stronger drinkers can add a glass or two of quality vodka.
