All pasta, which is based on wheat flour and water, the Italians have made it a rule to call pasta. Each region has a particular type of pasta that its inhabitants prepare in their own way, giving the dish a special touch. Classic recipe

Steps of cooking carbonara
Cooking carbonara pasta includes the following steps:
- Fry diced bacon in olive oil.
- Cook spaghetti in s alted water. Make sure the cooking state is al dente. To achieve this, you need to take the pasta out of the pan exactly 1 minute before the recommended time on the package.
- In a separate bowl, mix cream and eggs (they need to be beaten as thoroughly as possible), as well as s alt and pepper.
- Place the bacon on a plate and brown the garlic in the remaining oil. Put spaghetti there, remove from the pan. Add sauce and mix wellto curdle the eggs. After that, you can add bacon. Season with s alt and pepper.

- 2 tbsp. l. red wine.
The pasta recipe includes the following steps:
- Fry the minced meat in vegetable oil until it acquires a beautiful brown hue. After that, you need to drain the remaining fat and add the onion (pre-cut it) and garlic, continuing to cook for another 2-3 minutes.
- Next, you need to add the rest of the ingredients to the pan and continue to simmer for another half an hour, closing the lid. This is enough time for the sauce to thicken.
- Cook the pasta until al dente, put it on a plate and carefully spread the prepared sauce on top.
The finished dish to complete the presentation and give a more delicate taste, sprinkle with grated parmesan.
Pasta arabiata
Although arabiata is considered a classic Italian dish, it was invented not so long ago, only in the 20th century. The mixture of red peperoncino and garlic often makes this pasta "evil".

You will need the following ingredients:
- 500 grams of pasta;
- 2-3 carrots (for the dish they need to be cut into strips);
- 350 grams of broccoli;
- 200 grams younggreen peas;
- 150 grams of cherry tomatoes (about 10-15 pieces, depending on the size of the vegetable);
- 1 sweet pepper;
- parmesan;
- 5 garlic cloves;
- s alt and pepper.
Cooking is divided into the following steps:
- Heat the olive oil in a frying pan, and then fry the garlic on it (finely chop it first). This procedure will take 30 seconds. As soon as the garlic begins to change color, it will need to be removed from the heat. Now you can add pepper and cherry tomatoes, mixing the dish well.
- Cook the pasta until al dente, adding vegetables in the last few minutes (2-3). Drain water from cooked spaghetti.
- When serving, sprinkle pasta with grated parmesan.
Lasagna pasta
Lasagna is a pasta that has the shape of a flat rectangle or square. Layers of toppings vary by region and include tomatoes, minced meat, spinach, and other vegetables.
To make pasta at home you will need the following ingredients:
- 375 grams of lasagne strips,
- 500 grams ground beef,
- 400 grams of fresh tomatoes,
- 150 grams of mushrooms (chopped),
- 2 tbsp. l. olive oil,
- onion (chopped),
- 2 cloves of garlic (pass through a press),
- ¼ cup of tomato paste,
- 0, 5 glasses of red wine,
- parsley leaves (2 tablespoons),
- 0, 5 cups gratedparmesan,
- 1, 5 cups grated cheese (any)
- 2 cups of milk,
- ¾ cup cream,
- 2 tbsp. l. flour,
- 125 grams of soft cheese (like ricotta).
Cooking lasagna - steps
- The oven must be heated to a temperature of 180 degrees. Grease the form that will be used for baking.
- Heat the oil using a large frying pan and then fry the garlic and onion in it. In order for them to become soft, 4-5 minutes will be enough. Then add minced meat and cook for another 4-5 minutes. Then introduce mushrooms, and after 2-3 minutes - tomato paste. Now it's time to add wine with tomatoes, leave to simmer for 10 minutes to partially evaporate the liquid. At the final stage, add parsley, s alt and pepper the filling for future lasagna.
- Recipes for making pasta at home certainly include cooking white sauce. For it, you need to melt the butter in a frying pan, then add the flour and cook for a minute over high heat, stirring thoroughly. Now you need to remove the flour from the heat and add milk to it, mix well and put on fire again. Once the mixture boils, reduce heat and simmer until thickened. Then you need to add ricotta, pepper and s alt the sauce.
- In the form that will be used for baking, lay out a sheet of lasagna, first cutting off the excess along the edges. After - put half the minced meat, and then pour the sauce (also use half). Sprinkle with ¼ cheese. Make another same layer on which you needput a sheet of dough.
- Whip the cream with the egg in a separate bowl, and then pour them over the lasagna. Sprinkle cheese on top and put in the oven. Half an hour will be enough for baking. It is important that a golden crust appears. Immediately before serving, it is recommended to let the dish brew (5 minutes is enough for this).
Pasta with pesto sauce
Ingredients:
- 340 grams of pasta;
- ¾ basil leaves;
- 0, 5 cups Parmesan (grated);
- 3 tbsp. l. pine nuts;
- a third cup of olive oil;
- 2 medium sized tomatoes;
- 2 cloves of garlic;
- a third of a cup of cream (prefer a product with a high percentage of fat content);
- a piece of butter;
- pepper (Italians prefer to use freshly ground);
- s alt.
The preparation is very simple and includes the following steps:
- Chop the pine nuts, parmesan, garlic and basil in a blender. S alt and pepper the dish to taste. Now pour in the olive oil in small portions and mix thoroughly.
- Preparing pasta according to this recipe involves heating the cream in a small saucepan, then add the butter and wait until it melts. Then add the pesto to the pot and mix well.
- Put the boiled pasta in a deep dish, and then mix them with pesto sauce. After you need to add tomatoes, previously diced.
Shrimp fragrant pastewith tomato-wine sauce

- Put the pasta on a plate, add the shrimp, pour over the sauce.
