Chicken cooked with such a sour dressing turns out to be excellent - juicy, fragrant, with a crispy crust, as in the picture. One scent involuntarily salivates.

Ingredients
For this amazing recipe you will need:
- 1 chicken carcass;
- 300g cranberries;
- 2 sweet apples;
- 2 large onions;
- 100ml red wine;
- 100 g honey;
- 2 tbsp. l. soy sauce;
- 4–6 garlic cloves;
- 100g butter;
- s alt, pepper;
- a few sprigs of rosemary.
Oven-baked chicken in lingonberry sauce looks festive and bright, but you can cook it and cut it up, or, for example, usingmouth-watering parts of the carcass to your liking.
Preparing chicken
So, let's start cooking chicken in lingonberry sauce. The chicken needs to be processed first. If you want to bake the chicken in parts, then cut it along the tendons, if not, then just rinse it thoroughly inside and out. Dry the carcass with a clean waffle towel or napkins. Set aside.
Put a small bowl in a water bath, melt a piece of butter in it. Cool it down a bit. Peel and put a few cloves of garlic through a press (reserve a couple for lingonberry sauce), throw them into the oil. Add soy sauce there, to taste a little s alt, pepper, you can also add a little fragrant paprika, dried herbs. Mix the ingredients well and cool so that the oil can be rubbed into the chicken with your hands.
Butter is a great fat for frying chicken, thanks to it the meat turns out soft, fragrant, and with butter, the chicken gets a nice crust during frying.
Scoop up the melted butter with the spices and garlic cloves and rub well inside and out with your hand. Then, with a knife, make deep holes in the future chicken in lingonberry sauce. The chicken should be soaked in garlic and spices, especially the meaty parts, so cut the legs, drumsticks, pierce the fillet through the ribs and pour in the oil, add the garlic.
Leave the chicken carcass for half an hour to infuse at room temperature. Periodically make the future New Year'sdinner massage, rubbing spices and garlic.
Frying and pan preparation
Take a wide frying pan so that the chicken fits in the area and turns easily, ignite it, put the rest of the oil. Put the chicken in the pan, straight whole, back to the bottom and fry until crusty, turn on its sides. We don't need to fry the chicken, just get it crispy.
Remove the chicken from the heat and prepare a baking sheet to roast it. Rinse the form or baking sheet that is convenient for this, dry it and cover the bottom with foil. Put the chicken on it and pour out the remaining oil, if any.
Apple peel and seeds. Cut into not too thick slices. Spread these pieces around the chicken, between the legs, inside, under the wings.
Leave the chicken alone and start making lingonberry sauce.
Cowberry sauce
And now we will tell you how to make lingonberry sauce. For this you need a blender. Lingonberries, if it is frozen, defrost in advance. Put the berries in a bowl and beat into a smooth puree. Throw the remaining garlic in a blender. S alt the lingonberry sauce a little, add pepper for a pleasant, spicy flavor.
Pour the wine into a small saucepan, put on fire. As soon as it starts to boil, lay out the lingonberry mass, mix. In the same bowl, add honey. Bring the mass to a boil, while reducing the heat to a minimum. Mix the ingredients, honey shouldmelt away.
When lingonberry sauce boils, remove from heat and let cool slightly.
Peel the onion, cut the halves of the onion lengthwise into four parts and chop across into slices of 5-7 mm. Transfer the onion to a separate container and squeeze a little with your hands to release the juice.
Sprinkle onions on the chicken, put a little inside, under the legs, between and under the wings.
Pour lingonberry sauce over chicken. It also needs to be poured inside and rubbed well into the carcass. Place a few sprigs of rosemary on the chicken.
Into the oven
We have reached the finish line in cooking chicken in lingonberry sauce. Cover the chicken with another sheet of foil, securing it to the sides of the baking sheet.
Preheat the oven to 200 degrees, send the chicken into it for an hour. 10-15 minutes before the timer expires, remove the top sheet of foil so that the bird takes on a crust.

Transfer the finished bird to a suitable dish, pour sauce from a baking sheet on a dish, garnish with fresh herbs and serve.
