There are no additives in real Italian spaghetti - this is the main principle. In Italy, they are made from wheat flour and water, not dried, and served immediately. Unfortunately, exporting such spaghetti is problematic. They deteriorate quickly, so they are dried and sold in the form we are used to, packaged.

To tell good spaghetti from mediocre spaghetti, first look at the integrity of the product in the package. Good spaghetti will not crumble or break, each individual pasta will be smooth and without cracks. The second thing to look at is the color. The rich yellow color of spaghetti is not always a sign of their quality. Make sure it doesn't contain food coloring or eggs. Small inclusions, visible to the naked eye, will be a clear sign that durum wheat flour was used to make spaghetti. When broken, a quality product will have an even color in cross section, if the core is white or different in color, then the product is made from lower quality raw materials.
