Often you want something unusual and certainly meat. You won’t surprise anyone with cutlets for a long time. But the chicken muffin will be appropriate in many cases. It makes a great (and convenient!) snack, it's good on a buffet table, and it's very attractive to kids as a school breakfast. In addition, it is prepared simply and does not require pretentious ingredients.
Vegetable chicken muffins
To get started, let's make a simple but insanely delicious chicken muffin. The average onion crumbles finely, one small carrot is cut in the same way. Roasting is made from them, and it should be well fried. A small zucchini is peeled and rubbed with a coarse grater, after which the chips are also chopped. Parsley and dill are chopped. A pound of minced chicken is mixed with all prepared ingredients, peppered, seasoned with Provencal herbs and s alted. Balls are made from the mass, which are carefully placed on cupcake tins. Half an hour inoven, decorate to the best of your imagination - and the snack is waiting for the eater!
Chicken Cheese Muffins
From the bird's breast (a third of a kilogram), minced meat is made by scrolling in a meat grinder along with the onion. An egg is driven into it, as finely chopped paprika as possible, a grated clove of garlic, favorite spices and, of course, pepper and s alt are poured. The mass is kneaded; if it turns out to be watery, it can be thickened with breadcrumbs. Two-thirds of the minced meat is distributed among the cells of the muffin mold. In the center of each element, a recess is made into which a piece of mozzarella-type cheese is inserted. From above, "caps" are made from the remaining minced meat. For a nice crispy crust, each chicken muffin is sprinkled with a mixture of breadcrumbs and grated cheese. It is sprinkled with olive oil, and the mold is placed in the oven for a third of an hour.
Mushroom snack
As everyone knows, chicken harmonizes wonderfully with champignons. This was taken advantage of by the chef who came up with chicken muffins with mushrooms. For them, a third kilo of mushrooms, carrots and onions are peeled. The root crop is rubbed, the rest is crushed. Mushrooms are fried until the release of water stops, then onions and carrots are added and frying is done. Chicken fillet with a total weight of 600 grams is ground in a meat grinder, mixed with vegetables, two tablespoons of oatmeal, a stack of cream, pepper and s alt. The mass should stand for about ten minutes for the mutual impregnation of the ingredients. Then the minced meat is distributed over the molds (greased, ifthey are tin, and moistened with water if they are made of silicone) and sent for half an hour to a heated oven. After removing from the oven, the "patties" should cool slightly, after which they can be removed from the molds. Each chicken muffin is drizzled with melted butter and sprinkled with chopped herbs. If desired, a few minutes before cooking, you can sprinkle chicken muffins with cheese and return to the oven. Some chefs replace cheese with mayonnaise, this is a matter of taste.
Suitable sauce
Whatever chicken muffins you cook, they will be tastier with gravy: the chicken is still somewhat dry. Of all the sauces offered by the chefs, we chose two. And it is not necessary to fill the chicken muffin with gravy, you can just dip it in it.
For the first, tomato juice is taken; finely chopped onions with garlic, spices (optional; for those undecided, we recommend Italian herbs), a couple of drops of lemon juice and a little vegetable oil.
For the second, garlic is pressed into ayran (sold in supermarkets), dill is chopped and ground pepper is poured. Other spices are optional, and the result is fragrant and harmonious.
