Every year, at the end of summer, it's time for spins. Cucumbers, tomatoes, salads, lecho, compotes - all this is prepared for the winter. Many follow proven recipes, someone often experiments. For example, you can try pickling cucumbers without vinegar. Many say that without it it will turn out tasteless, sourness must be. But in some recipes, there are enough other spices and seasonings - the appetizer still turns out to be very tasty. To verify this, you can consider the recipes for pickling cucumbers without vinegar and next time be sure to try to make one of them.
Preparing cucumbers for pickling
Despite the variant of the recipe for pickling cucumbers (without vinegar or with vinegar), it is necessary to prepare vegetables correctly. To begin with, they need to be sorted into two groups: those that are smaller, into one, those that are larger, into another. We will need this later, when putting them in jars. All cucumbers should be washed with cool water and soaked for 3-4 hours in another cool water. After that, it is necessary to thoroughly wash each cucumber, preferably with a sponge, but in no case with detergent! The use of excess chemicals will not lead to anything good. It is best to pickle cucumbers inthe same day they were collected.
Preparing jars for use
Now few people s alt cucumbers in barrels, but there are some. Now let's talk about how to prepare jars for pickling cucumbers (without or with vinegar, it doesn't matter). To begin with, all cans must be carefully examined for possible cracks or chips - they should not be in any case, otherwise either the cucumbers can turn sour or the cans can crack, any option is unlikely to suit anyone, so it's better to avoid them. Next, the jars should be washed in as warm water as possible with a clean (preferably new) sponge. It is safest to use baking soda as a detergent - it will remove all possible dirt from the walls of the cans and can be easily washed off with warm water.
Sterilization of jars for pickling cucumbers
After washing the jars, they need to be sterilized. Of course, there are ways to pickle cucumbers without vinegar and without sterilizing the container, but the advice of an experienced housewife is to spend some of your precious time and do this, there will be more confidence that the jars will not explode and remain intact.
There are also, oddly enough, a lot of methods of sterilization. You can do this over steam, in boiling water, in the microwave, in the oven, in the dishwasher, or in potassium permanganate. To select the appropriate method, you need to consider each of them.
- Over the ferry. To do this, take a pan with the largest diameter - soit will be possible to sterilize more jars at once. A small amount of water needs to be boiled and put a grate or a special circle on top of the pan (which many had in Soviet times), put the already washed jar upside down on top. After boiling water, the fire under the pan can be reduced and left in this state for 10-15 minutes. How do you know if banks are clean? If, after boiling, no drops of water remain on the walls inside the jar, the jar is clean and ready for use. But in the event that there are drops, you need to rinse the jars and sterilize them again (after cooling). After that, do the procedure again.
- In boiling water. This method is suitable if the jars for s alting are small. Washed jars should be placed in a saucepan and filled with cool water so that it completely covers each jar. Put the pan on the fire and after boiling water "cook" for 5-7 minutes. It is important that you put sterilized jars on a clean cloth, preferably pre-ironed.
- In an electric oven. A gas oven will not work, as the temperature inside it does not rise evenly, and this is very important in the process of sterilizing jars. Banks need to be put in the oven upside down, turn it on at 120 degrees and leave for 15 minutes.
Lazy sterilization options
- In the microwave. To sterilize the jars in the microwave, you need to fill each of them with a little water, otherwise they will simply crack. If the jar is tall, it can be put on its side, but water must be pourednecessarily. Set the power to 800-900 watts and turn on for 3 minutes. Sterilized jars are ready!
- In the dishwasher. To do this, you need to put the jars washed with soda inside and set to the maximum temperature - no detergent will come in handy.
- In potassium permanganate. This method is suitable if it is completely inconvenient to boil water, install complex structures, or simply do not have enough time. After washing with soda, each jar must be rinsed in a bright pink solution of potassium permanganate.
Preparation of spices and seasonings
It doesn't matter how the cucumbers are cooked, but all spices and seasonings must be prepared properly. In almost any recipe for pickling cucumbers without vinegar, currant, cherry, horseradish leaves are placed in jars. All of them must be thoroughly washed and dried. It is better to do this with a clean, preferably ironed cloth. It is not necessary to pour boiling water over the greens, as this will wash off some of the taste that should get into the cucumbers.

For this option you will need:

- s alt;
- herbs and spices (currant leaf, horseradish, dill, garlic, black peppercorns).

For a spicy taste, you can add a bay leaf, for a spicy one - a few pieces of hot pepper. Then lay out the cucumbers, better standing and as dense as possible. The top layer, which is closer to the neck, can already be laid lying down, just use cucumbers as small as possible so that they lie more densely.
Preparing the brine: in a separate container, mix cool water with s alt in the ratio of 100 g of s alt per 1 liter of water. It is better to use rock s alt, so the cucumbers will be more crunchy. Pour cucumbers with the resulting liquid almost to the very neck - 1-2 centimeters can be left - and close with a nylon lid.
So the cucumbers should stand for 4-5 days until the brine is transparent (all the sediment will remain at the bottom). As soon as the brine becomes transparent, it can be drained and filled with new clean water. This procedure can be carried out until all the cloudy precipitate comes out, but do thisnot necessary. After we prepare the lids (they should boil for 5-10 minutes in a saucepan with water) and roll up the cucumbers ready for pickling.
It is important to pour water to the very edges of the jar so that there is no air inside. So they can stand at room temperature, and in a cold place at least all winter.
