Finish kneading when it becomes soft and shiny. From the spoon, the dough should slide slowly, with the same type of wide ribbon. Attention! If the dough is too thick, the eclairs will not rise! Therefore, add eggs gradually.
- Now line a baking sheet with parchment. Put the dough on it in any shape you like. It can be profiteroles or eclairs, or anything else. Spread the dough well with a pastry bag. If you do not have it, use a tight bag or just a spoon. Leave some space between the eclairs as they will expand as they cook.
- Send the eclairs to the oven, heated to 200-240 ° C, for 20 minutes. Attention! Do not open the oven until the products are completely cooked! Otherwise they will settle down.
