Rice Noodle Salad Recipe
To prepare this wonderful dish you need ingredients:
- Large onion (preferably red for beauty) - 1 pc.
- Rice noodles - 200g
- Bean pods (it is better to take frozen ones) - 100 g.
- Medium Carrot - approx 150g
- Soy sauce - 2 tsp. (to taste).
- Vinegar - 50g
- Pepper, s alt, garlic, lemon to taste.
First, defrost the beans and pour over with hot water (you can use boiling water). Let it stand for no more than 5 minutes, then fill it with cool water. Vinegar dilute with water 1: 1 and put in it the onion cut into half rings. Carrots can be chopped into thin strips, but the easiest way is to rub on a coarse grater. Ricedip the noodles in boiling water for 2 minutes so that they do not boil.
Combine beans, carrots and onions in a salad bowl. Finely chop the garlic, lightly fry in a pan, put rice noodles in the same container. Then toss it with vegetables and season with spices.
Some housewives add a little turmeric for color and spice to the dish. Drizzle with lemon juice and serve. It turned out a salad with rice noodles and vegetables. It's delicious, nutritious and light.
Add seafood
Shrimp, octopus, mussels can be added to the salad. The dish becomes more tender and spicy. Prepare the ingredients:
- Seafood to your taste - 100 g of each type.
- Rice noodles - 200g

- Soy sauce - 3-4 tbsp. l.

Meanwhile, boil the rice noodles, and cut the vegetables (onions, carrots, garlic) into thin strips. Saute the onion first, then add the carrots for 2 minutes and only then the seafood. Fry everything together for up to 10 minutes. Add noodles, soy sauce and simmer no more than three minutes.
This dish can be served ashot as well as cold. It turns out appetizing, tasty, original.
Chicken and rice noodle salad
This is a summer version of the dish. To prepare it you will need:
- Medium-sized carrots, onions, sweet peppers and zucchini - 1 each
- Chicken breast and rice noodles - 200g each
- Medium tomatoes and cucumbers - 2 pcs
- Sesame - 2-3 tbsp. l.
- Soy sauce to taste.
It is not necessary to take the vegetables that are in the recipe, you can cook from what you have in the refrigerator. Everything needs to be cut into small strips. Carrots can be rubbed on a coarse grater.
Lightly fry the onion (until transparent) and add the breast cut into small cubes. Then add carrots. It needs to be fried for 2 minutes. After carrots put pepper, zucchini and cucumbers. Everything is fried together for no more than three minutes. Now you can add sesame seeds, pour vegetables with soy sauce and grated tomatoes.
While the vegetables are fried, pour boiling water over the noodles for 3-5 minutes. Add it to the vegetables, mix gently and simmer for two minutes. The dish is ready to serve. You can decorate it beautifully with parsley, radish or lettuce.
Korean rice noodle salad
