For their preparation, you will need about 300 grams of minced meat. It is better if it is several types of meat (for example, beef + pork). We also take about 100 grams of rice. Here, too, there is room for your own preferences. You can take ordinary round, wild or long grain rice. As ingredients, you will also need a glass of water, two small onions or one large one, one carrot and one egg. You need to prepare a mixture of stewed vegetables in advance, but any raw ones will do. We also prepare one spoonful of ketchup and mayonnaise, two tablespoons of sour cream, a small spoonful of mustard, seasonings (paprika, s alt,turmeric, any pepper and oregano) and fresh herbs (dill).
These are all the ingredients you need to make hedgehogs with rice. Now let's start creating them. Rice should be boiled until half cooked. Then we wash it well and dry it a little. Minced meat is mixed with finely chopped onion, egg and spices. After that, mix it thoroughly. Now add boiled rice to it and mix well again.
Next, we form hedgehogs from minced meat. This should be done with hands dipped in water so that the meat does not stick to them. We put the pan on the fire and fry the hedgehogs in a small amount of vegetable oil. Separately, mix sour cream, mustard, mayonnaise, ketchup and stewed or raw vegetables. Pour water into this mixture, add s alt to taste. Now pour the hedgehogs in the pan with the prepared sauce and simmer for about 30 minutes. Minced hedgehogs can be served as a separate dish. Any vegetables, herbs, salads and side dishes are also suitable for them.
To please children and make their food more interesting, you can cook stuffed hedgehogs. To do this, you need 10 boiled eggs, 500 grams of any minced meat, two cloves of garlic, a few tablespoons of mayonnaise and sour cream, one or two boiled carrots and one raw egg. You also need to prepare spaghetti for decoration.
10 eggs pre-boil and peel. Then cut them into two halves and remove the yolk. Knead the yolks with a fork and mix them with grated cheese, carrots, chopped garlic, mayonnaise orsour cream. S alt to taste. We start with this mixture halves of eggs and connect them in pairs.
Add chopped onion, pepper, egg, s alt to minced meat and mix well. Now we lay the stuffed egg in a small amount of minced meat and form an oval. Then we give it a slightly elongated shape that resembles a hedgehog. From above we imitate needles from pieces of spaghetti. We send the hedgehogs to the oven for 30-40 minutes. You can serve them with any side dish. It is not only delicious, but also very funny. Such food is suitable for a children's menu.
