What you need for this:
- thin tortillas - 8 pcs;
- olive oil - 1 tbsp. l.;
- small green pepper - 1 pc;
- small red pepper - 1piece;
- onion;
- ground cumin (zira) - half a teaspoon;
- frozen green beans - 400 grams;
- frozen or canned corn - 200-250 grams;
- tomato - 1 pc;
- ketchup - 3 tbsp. spoons;
- garlic;
- cilantro.
Cooking
Heat the tortillas in the microwave. At this time, finely chop the onion and pepper. The latter should first be cleared of seeds. Pour boiling water over beans and corn for just a few seconds so that they defrost and soften a little. Slice the tomato. Put a frying pan with olive oil on the fire, heat it up, then pour the onion, pepper, garlic into it and fry for a couple of minutes over medium heat. Then add cumin and simmer for another minute. Put the corn, beans, tomatoes in the pan and mix thoroughly. Add some ketchup and water. Cook over low heat for about three minutes.
Spread the hot mixture in the center of each tortilla, sprinkle with cilantro and grated cheese, pour over with yogurt. Served hot burritos for each person.
Also, my favorite dish is chicken, for which I prepare a side dish of green beans. It is also easy to make, but the result will exceed all your expectations!
So, based on 2 people you need:
- chicken meat (thighs, wings, drumstick, legs) - 2 pcs;
- frozen green beans - 100 grams;
- bell pepper - 1 pc;
- garlic;
- onion;
- olive oil for frying;
- s alt and pepper;
- rosemary, Provence herbs;
- greens.
Cooking
Chicken meat thoroughly washed and dried. Pour oil into a large frying pan and put on fire. When the oil is already hot, put the chicken on it. Fry the meat on both sides until golden crispy. While it is fried, cut the onion into thin half rings and carefully spread around the chicken. Fry for a couple of minutes.
Bulgarian pepper is cleaned from the tail and seeds and cut. Frozen green beans are also cut into several pieces. Peppers and beans are added to the onion. Fry everything for 5-7 minutes. Finely chop the garlic or pass through a press and also add to the pan along with s alt and seasonings. Cover the pan with a lid and simmer for about 20 more minutes, stirring occasionally.
The dish is served hot, sprinkled with chopped herbs. Chicken with beans can also be served with boiled new potatoes or spaghetti with cheese.
