First, they must be at room temperature (accordingly, they must be kept warm if they were stored in the refrigerator). Secondly, the blunt end of the eggs should be pierced with a needle and lowered for exactly one minute in water brought to a boil.
- Crack the eggs in half, drain the liquid component into the prepared container, then send a thin layer of protein that formed during cooking to the same place, gently scraping it off the shell with a spoon. Beat the contents with a blender.
- Squeeze the juice from half a lemon and add it to the egg mass. Mix thoroughly.

- In a small bowl, mix water, lemon juice, egg yolk (raw), s alt, pepper and mustard. Put the saucepan on the burner and bring to a boil.
- Add olive oil and anchovies to the slightly cooled mass. Beat the prepared sauce with a blender and cool.
