Next, the zest of one lemon and pre-soaked light raisins (half a glass) are added to the mass. Bake such a lemon mannik for 25 minutes in a preheated oven.
This recipe can be slightly diversified if you exclude flour from it, and take cottage cheese instead of sour cream. It is quite possible to replace raisins with dried apricots. Mannik without flour and eggs

To do this, you need to squeeze the juice of a lemon (from which the zest was removed) into warm water (100 ml) and add a spoonful of honey. If necessary, the resulting impregnationstrain through a sieve. After the mannik is ready, you need to make punctures on it in different places with toothpicks and pour impregnation on top. It is better to leave the cake in the form until it cools down.
Walnut-lemon mannik
Traditional pie dough can be supplemented with other additives, such as nuts, for a delicious lemon mannik. The recipe for its preparation is simple. Nuts should be pre-fried and chopped, and the zest should be finely grated. The yolks of three eggs should be separated from the whites and added to sugar grated with butter (130 g of butter per 200 g of sugar). Then ordinary yogurt, two cups of semolina, zest and a little more than half a cup of chopped nuts are added to this mixture, everything is mixed. The next step is to beat the whites into a thick foam and add to the dough. The resulting mixture is poured into a mold. Bake the cake in a preheated oven until done.
While mannik is baking, you can prepare syrup: dissolve a tablespoon of powdered sugar in a glass of boiling water and add lemon juice. 2-3 minutes before the cake is ready, it will need to be taken out of the oven and poured over with syrup.
