Although, as noted by some modern housewives, it is the old method of steaming the dish that allows you to get a more tender and fluffy texture.

With cottage cheese

Delicious and fluffy dumplings, the dough of which is kneaded on kefir. This allows you to get an airy texture of the dish. And the filling (cottage cheese) complements the taste of dumplings, making them even more fragrant and satisfying.

Preparation and ingredients for steamed dumplings with cottage cheese:

  1. In a deep container for kneading the dough, drive a chicken egg (1 piece), pour kefir (150 milliliters), stir.
  2. Add s alt (15 grams) and baking soda (10 grams).
  3. Wheat flour (350 grams) pass through a sieve and pour to the ingredients, mix, knead elastic dough.
  4. Set aside for 20 minutes.
  5. For the filling, put pre-mashed fat cottage cheese (200 grams) into a small container, beat in the yolk (1 piece) and pour s alt (15 grams) or sugar (20 grams), mix.
  6. Roll out a large “cake” from the dough on a floured work surface of the table, the thickness of the layer is 7 millimeters.
  7. Use a glass to cut out round blanks.
  8. Put a little stuffing on eachafter making a recess with your hands.
  9. Connect the dumpling halves.
  10. Spread finished products on a floured board, towel or table.
  11. In the slow cooker, turn on the "Steamer" program, pour the required amount of water into the bowl and put dumplings on the grate (at a short distance from each other).
  12. Cook the dish for 10 minutes.

With potatoes, onions and herbs

It is important to note that dumplings prepared in this way are a real classic of Ukrainian traditional cuisine. Thanks to this method of preparation, they are tender, airy and dietary. And if you add mashed potatoes with onions and herbs as a filling, then vegetarians will like this dish.

Process description and ingredients:

  1. Combine a chicken egg (1 piece) and 200 milliliters of kefir at the same time.
  2. In the flour passed through a sieve (350 grams), add 10 grams of s alt and the same amount of soda, mix.
  3. Pour the mixture into the liquid component of the batch and gradually form a ball of dough (during the process it is recommended to stir in 30 milliliters of vegetable oil).
  4. Set the dough aside for 30 minutes to infuse and form natural gluten.
  5. Prepare the filling of mashed potatoes (400 grams), browned onions (80 grams), dill (30 grams), s alt (15 grams), ground black pepper.
  6. Make dough into round pieces (5 mm thick), lay outstuffing and pinch the edges.
  7. Using a bain-marie or a slow cooker, prepare the dish (the dumplings will become larger, so you need to leave a distance when laying them out).
  8. Serve steamed potato dumplings with butter and sour cream.

Stuffed with stewed cabbage

A wonderful recipe for dumplings, which, just like with potatoes and cottage cheese, is extremely tasty, satisfying, soft and easy to prepare, is a dish stuffed with fragrant cabbage.

Here you can fantasize as much as you like: add a tomato during stewing or without it, a variety of spices, herbs, onions, carrots and so on.

Process description and ingredients:

  1. Knead the dough for steamed dumplings on fat kefir (250 milliliters), soda (5 g), s alt (10 g) and wheat flour (500 g).
  2. Roll out the layer, cut out round blanks.
  3. Spread the pre-prepared stuffing from stewed cabbage (200 g) on flat cakes, seal the edges well.
  4. Cook in a double boiler (time - 7 minutes).

With cherries

An excellent recipe for sweet steamed dumplings made from the most delicate dough with berries is the best dessert of the summer table. You can also use frozen cherries, then the dish will remind you of a warm summer even in the cold season.

Description of the cooking process and ingredients:

  1. Warm up kefir (500 milliliters, fat content - 2, 5%.
  2. Pour into a mixing container, add s alt (5 grams), slaked vinegar (8 milliliters) soda (20 g), stir the mixture.
  3. After 15 minutes, pass wheat flour (1 kilogram) through a sieve over a container.
  4. Stir the mixture with a wooden spatula and knead into a soft dough.
  5. Shape round blanks.
  6. For the filling, prepare fresh or frozen cherries (0.8 kilograms) pitted and granulated sugar (to taste).
  7. Spread the filling (sugar and a few berries) on the dough and fasten the edges well.
  8. Prepare a container for cooking, put on fire and bring water to a boil, fix cheesecloth (in this way the cooked dish will turn out to be especially tender and airy).
  9. Spread a batch of dumplings, cover and cook for 5 minutes.
  10. Sprinkle the dish well with granulated sugar.

Large steamed dumplings are ready.

With blueberries

In this recipe, the dough is kneaded not with kefir, but with sour cream. The dish also turns out tasty and appetizing. As for the splendor and tenderness of dumplings, it will depend on the steam cooking method: on gauze (softer) or in a double boiler (harder).

Process description and components:

  1. Knead the dough by combining 200 grams of wheat flour with 4 grams of soda and 200 milliliters of sour cream (by consistency, it should not stick to hands).

  4. On the table, roll out a layer of dough, formround blanks (height 5 millimeters).
  5. Put sugar and a couple of berries on each "pancake", seal well around the edge.
  6. Prepare a steam bath (pot with water and gauze on top) on the stove (or double boiler), spread the dumplings, leaving space between them.

By cooking time: on gauze - 10 minutes, in a double boiler - 4 minutes.

Serve hot, sprinkled with plenty of granulated sugar.

With mushrooms

This is a delicious recipe for steamed dumplings with potatoes and mushrooms seasoned with fresh herbs and spices.

Process description and ingredients:

  1. Boil peeled potatoes (400 grams) without adding s alt.
  2. Prepare 200 grams of mushrooms (champignons), chop them into medium pieces, saute in vegetable oil.
  3. Pour in 40 milliliters of soy sauce, which will make the taste of mushrooms stronger.
  4. Chop a pinch of dried porcini mushrooms and pour over mushrooms.
  5. Add s alt (10 grams) and ground black pepper (5 grams).
  6. Chop fresh dill (20 grams), pour over mushrooms.
  7. Combine mashed potatoes and mushrooms, mix.
  8. Chop the onion (80 grams) and sauté in vegetable oil, pour the vegetable into the filling.
  9. Knead the dough by combining wheat flour (0.5 kilograms), drinking water (300 milliliters), s alt (10 grams), starch (30 grams), set aside for 15 minutes.

  12. Pour a certain amount of water into the cooking container, s alt, put gauze or a wire rack, cover with a lid or a bowl, boil.

Vareniki with potatoes and liver

To make the dish even more satisfying, rich and tasty, you can add boiled liver (chicken, pork) to the potato filling. This makes steamed dumplings a great dinner or Sunday breakfast (lunch) for the whole family.

Description of the cooking process and ingredients:

  1. Knead the dough from wheat flour (1 kilogram), water (300 milliliters), eggs (1 piece), s alt (10 grams).
  2. Put the soft and elastic dough into a container, leave.
  3. Prepare the filling of boiled potatoes (0.5 kilograms) and fried liver (300 grams).
  4. Cook the peeled tubers in s alted water, grind to a puree.
  5. Brown the liver and stew it in vegetable oil (30 milliliters), grind.
  6. Combine potatoes and liver, mix.
  7. Sauté onions (150 grams) in vegetable oil (10 milliliters).
  8. Pour into the filling, add s alt (20 grams), ground pepper (5 grams), other spices, mix.
  9. Prepare dough pieces, put potatoes with liver, fix.
  10. Pour water into the multicooker bowl, set the grate on which to place the dumplings (cook in the "Steamer" program).
