This allows you to keep an unsurpassed spicy aroma even in finished products.
The original bun dough recipe is a closely guarded secret. But this does not mean that synabons cannot be prepared at home. Below is a recipe for these delicious buns from simple and affordable products.
Ingredients for Cinnamon Sinabons
Fragrant buns are traditionally prepared on the basis of yeast dough in a sponge method. The following ingredients are used for this:
- dry yeast - 11 g;
- sugar - 100 g;
- milk - 200 ml;
- butter - 80 g;
- egg - 2 pcs;
- flour - 650 g;
- s alt - 1 tsp
Fragrant spicy filling for buns is prepared from the following ingredients:
- cinnamon - 20g;
- brown sugar - 200g;
- butter - 50g
The final touch of the recipe is cream, thanks to which synabons literally melt in your mouth. The most delicate cheese glaze should be prepared from the following products:
- cream cheese - 60 g;
- butter - 40 g;
- powdered sugar - 100g

How to knead dough for buns?
It is recommended to get all the ingredients for the first stage of cooking out of the refrigerator in advance so that the butter becomes soft and the eggs warm to room temperature. In general, a step-by-step recipe for synabons with cinnamon will look like this:
- Pour 200 ml of warm milk into a deep bowl. Add yeast and sugar (1 tablespoon) to it. Cover the bowl with cling film and leave in a warm place for 20 minutes.
- Meanwhile, beat the eggs with the remaining sugar at a high mixer speed. Add soft butter and s alt. Once again, beat the ingredients well with a mixer so that the mass is airy and homogeneous like a cream.
- Sift flour and knead soft dough with hands. It should not stick to your hands.
- Cover the dish with the dough with a towel and leave it warm (for example, near the battery) for 2 hours. During this time, it will rise several times and will need to be crushed each time. Thanks to this, it will be saturated with oxygen, and the buns will turn out airy.
Dough recipe for synabons without yeast
The following recipe can be taken into account even by vegetarians. The dough for synabon buns with cinnamon is prepared not only without yeast, but also without the addition of eggs and milk. To knead it, you must do the following:
- Mix 4 cups flour, 7 tbsp. l. sugar, 1 tsp s alt and 1.5 tsp. soda.
- Pour 0.5 cups into the dry mixtureodorless vegetable oil and grind it into crumbs with a spoon. You can also use ghee or runny butter.
- Gradually pour in 300-350 ml of warm yogurt.
- Knead elastic dough with your hands.
- Leave it to rise on the table for 5-10 minutes. During this time, it will “rest” a little and become more elastic.
- Then it can be used for buns, like yeast.
Preparation of the filling and molding of products
The next step in creating delicious buns involves the following steps in sequence:
- Knead the risen dough for the last time for a minute, cover with a towel and leave on the table.
- Melt the butter in the microwave. Combine it with brown sugar and cinnamon. Shuffle.
- Roll out the dough into a 30 × 40 cm layer.
- Spread the filling on top, leaving a little space on the edge so that you can close the roll tightly.
- Roll the dough sheet along the wide side. Thus, a dense roll 30 cm long should be obtained.

- The dough is kneaded from flour withhigh gluten content. To make the buns as similar as possible to the original, you need to add gluten or gluten prepared by yourself to the dough. To do this, a ball is formed from a small amount of flour (1 tablespoon) and water (2 tablespoons) and washed under running water. When it becomes sticky, the gluten can be considered ready. Now it remains to be added to other ingredients along with flour.
- The original synabons should have five turns. This is one of the important features of the buns, elevated to the standard of the brand.
- The dough is not cut with a knife, but only with a thread or a knife. This allows you to keep the shape of the buns and not deform them.
Cinnamon and chocolate synabons recipe
You don't have to make cinnamon rolls only. If you add chocolate inside and cover the synabons with cocoa glaze on top, the pastry will also turn out delicious, perhaps even better than the original.
Step by step the whole process of making these buns is as follows:
- The dough for chocolate synabons with cinnamon (pictured) is kneaded on the basis of 200 ml of milk. The recipe can be seen above. In the meantime, it is resting in a warm place for 1-2 hours, you can start filling.
- Chocolate (100 g) with a high cocoa content (at least 70%) grate on a coarse grater or chop in a blender to make crumbs (shavings).
- The risen dough should be rolled out into a rectangular layer 3-4 mm thick. Lubricate it with melted butter (3 tablespoons), retreating slightly alongedge.
- Sprinkle the top of the dough layer with chocolate chips. Then roll it into a very tight roll. The more turns, the tastier the buns will be.
- Cut the roll with a very sharp knife or thread into pieces 3 cm thick.
- Place synabons on a baking sheet lined with foil or baking paper.
- Bake buns in a preheated 170° oven for 40 minutes.
- Make a frosting by combining 140g cream cheese, 1 tbsp powdered sugar, 2tbsp cocoa, 50g soft butter and cinnamon (to taste).
- While still hot, pour creamy glaze on top of the buns. Do not worry that it will begin to melt before your eyes. But the products will be soaked just perfectly and will turn out very tasty and chocolatey.
Synabone buns with caramel and cinnamon
Instead of buttercream, this recipe uses caramel as the icing. Here's how to cook these cinnamon synabons:
- Use a rolling pin to make a thin layer of dough. Brush it with liquid butter (50 g) and sprinkle with a mixture of sugar (100 g) and cinnamon (3 tbsp.).
- Make buns and leave them for 15 minutes in a warm place to increase in size. Then send the products to the preheated oven for half an hour.
- Cook caramel. To do this, pour 100 g of sugar into a saucepan and bring it to a liquid state over medium heat.
- Pour in 80 ml of cream and add 50g of butter. Cook for 2 minutes until the consistency of the sauce. At the very end, add 150 g of cream cheese.
- Take the buns out of the oven and pour hot caramel over them.
Sinabons with apples and cinnamon
It is not necessary to describe the process of kneading dough for buns. The best way here is to use yeast, both dry and pressed, only in this case they will have to be taken not 11 g, but 3 times more. But the filling will be special: juicy, apple, spicy, with a pleasant taste and aroma of ground cinnamon. It should begin to cook when the kneaded dough is suitable in a warm place. The whole process consists of the following steps:
- Apples (5 pcs.) Peel and seeds. Cut them into small cubes and put them in a deep bowl.
- Sprinkle apple slices with sugar (100 g), cinnamon and ginger (½ tsp each). Shuffle.
- Melt butter (25 g) in a frying pan. Put apples with sugar and spices in it. Stirring occasionally, caramelize the apples.
- Cool the finished stuffing.
- Roll out the dough into a rectangle. Spread apples in caramel on top. Form a roll with your hands, then cut it into pieces.
