In the process, you can carefully remove the skin from the hats, although this is not at all necessary. It is very easy to remove from young mushrooms. In general, it is better to take champignons of the same size, preferably small ones. If you got different mushrooms, then larger ones must be cut into pieces, but not into small ones. Next, transfer them to the pan and add all the ingredients according to the recipe, except for the lemon juice. We send the container to the fire and bring its contents to a boil, and then cook for five minutes. Lemon juice is added after the pan is removed from the heat. This recipe for pickled mushrooms allows you to get a ready-made snack in four days. Of course, this option cannot be called fast. But the advantage of the recipe is that it does not use vinegar. After all, not all people can eat food processed with a bite.
French Mushrooms
We offer another recipe for pickled mushrooms (the photo is given in the article). The peculiarity of the finished snack is that it has a spicy taste, since spices are used in the cooking process. Their number is calculated per kilogram of champignons.
Ingredients:
- mustard beans (tsp),
- bay leaf (five pieces),
- peppercorns (four pieces),
- allspice,
- vinegar (three tablespoons),
- ½ tsp each s alt and sugar,
- dill,
- chili,
- bow,
- celery.

Next, wash them thoroughly and put them in a saucepan. Fill the mushrooms with water, which should completely cover them. Add bay leaf and chili pepper. We send the container to the stove and cook the mushrooms for at least 30 minutes.
After we take them out and let them cool down a bit. We pack mushrooms in prepared clean jars. On top of each container we put half a spoonful of sugar and mustard. We also add pepper and herbs to the jars. As a marinade, we will use a decoction in which mushrooms were boiled, adding vinegar to it. Fill the champignons with a mass and close with nylon lids.

The key to successful cooking of pickled mushrooms lies in careful preparation. They must be thoroughly cleaned and washed, especially when it comes to forest gifts. Agree that the taste of even the finest snack will spoil the creak of sand on your teeth. As for champignons and oyster mushrooms, they do not need such thorough preparation.
In a saucepan, heat the vegetable oil, add spices, vegetables and pour everything with wine vinegar. We continue to simmer for fifteen minutes under the lid. In the meantime, chop the garlic and add it to the saucepan shortly before the end of cooking. Next, turn off the fire and leave the mushrooms to cool and soak in the marinade. After the champignons can be decomposed into jars.
Mushrooms with bell peppers

Meanwhile, we wash the mushrooms and boil them, adding quite a bit of citric acid. Sweet pepper cut into strips and fry in a saucepan. After we mix the mushrooms with pepper, put them in clean jars and pour the marinade on top.
Mushrooms in two hours

For a kilogram of mushrooms you will need:

- 1/3 stack vinegar,

- bay leaf.
Mushrooms are pre-cleaned and washed thoroughly. Next, prepare the marinade from a mixture of water, vinegar, spices and sugar. The solution is sent to the stove and brought to a boil. Dip the mushrooms into the boiling marinade. After boiling, the mushrooms are boiled for about 25 minutes.
Next, the mushrooms must be cooled by lowering the pan into very cold water. This will make the mushrooms even more elastic. After cooling, the snack can be safely transferred to a glass container and sent for storage in the refrigerator. The advantage of the recipe is that delicious pickled mushrooms can be served almost immediately.
Spices for mushrooms

Ingredients:
- 1 tsp sugar,
- s alt (two tsp),
- small mushrooms (570 g),
- pepper,
- bay leaf,
- apple vinegar (55 ml),
- olive oil (three tablespoons).
It's not hard to pickle mushrooms. The recipes are not difficult and do not require any special products.
So, wash the small mushrooms and boil for five minutes. While the mushrooms are cooking, prepare the marinade in a separate container. To do this, mix all these ingredients, pouring them with 0.5 liters of water. Bring the mass to a boil. And then pour in the vinegar.

Ingredients:

- liter of water,
- coriander,

- vinegar (three teaspoons per liter of water).
All assembledharvest in the forest must be carefully sorted out. We will marinate young and whole mushrooms. All the rest can be fried or cooked with them in soup. We clean the mushrooms and soak them in water for a couple of hours, and then thoroughly rinse them from sand and needles. We leave small ones whole, and cut larger specimens into several parts.
Further, pour the prepared mushrooms with cold water and send to the fire. Bring the mass to a boil, after which the first water is drained. Pour in a new portion and bring to a boil again. Mushrooms should be boiled for about thirty minutes until they settle to the bottom.
In the meantime, let's prepare the marinade ourselves. Mix sugar, spices, s alt and spices. All this is filled with water. We put the pan on the fire and bring the liquid to a boil. Marinade must be boiled for three minutes and only then add vinegar. After turning off the fire.
Next, put the mushrooms in clean jars so that they do not take up more than 2/3 of the volume. After we fill them with marinade, not forgetting to add all the spices and spices. We close the jars with lids and wrap them in a warm blanket until cool. Next, store in a cool place.
Instant mushrooms
This recipe is useful for every housewife. Thanks to him, you can cook pickled mushrooms in the shortest possible time. This is very convenient, since such gifts of the forest can later be used to prepare various dishes and salads. Crispy champignons are very tasty.
If you want to make a snack, thenyou just need to buy 0.5 kilograms of champignons. If you also plan to make a mushroom salad, then you should take at least a kilogram of champignons. The following quantity of spices is indicated specifically for a kilogram of products:
- s alt (35 g),
- sugar (25 g),
- allspice (15 pcs.),
- cloves (8 pcs),
- bay leaf (5 pcs),
- garlic (8 cloves),
- bow,
- ground coriander (tsp),
- wine vinegar (110 ml).
For marinade, you can use the most common vinegar. But then its amount must be reduced to 70 ml so that the finished product is not too acidic.
Peel the onion, cut it and pour it with vinegar. We wash the champignons and cut them into pieces if it was not possible to get small mushrooms. Now let's start preparing the marinade. Pour a liter of liquid into the pan and bring it to a boil, add all the seasonings, except for vinegar, garlic and onions. We are waiting for the complete dissolution of sugar and s alt.
In the resulting marinade we shift the mushrooms and cook for about ten minutes under the lid. It may seem to you that there is very little liquid, but the mushrooms release juice very quickly, and therefore they are completely covered with marinade.
Cut the garlic into slices and add it to the prepared mushrooms along with vinegar and onions. Turn off the heat, mix the entire contents of the pan and close it with a lid on top. You can also add chili peppers and dill for spiciness, which will add flavor to the dish. After cooling the mushroomstransfer to clean jars and fill with marinade. We cork the containers and put them in the refrigerator, in the morning the mushrooms can be served on the table.
The recipe is good because it allows you to quickly prepare a great snack. However, this option is not suitable as a preparation for the winter, since pickled mushrooms can only be kept in the refrigerator for a couple of weeks.
Mushrooms in six hours
This recipe also applies to quick pickled mushrooms. Delicious appetizer ready to eat in just six hours.
Ingredients:
- garlic,
- champignons (570 g),
- vegetable oil (55 g),
- pepper (six peas),
- vinegar (two tablespoons),
- ch. l. s alt,
- as much sugar as

- bay leaf.
Let's start with the marinade. Pour water into a saucepan, add all the spices and bring to a boil, then cook for five minutes. Pour sugar and s alt into a boiling liquid, stir until dissolved. Next, pour in vegetable oil and vinegar.
My champignons and dipped in a boiling marinade, then boil them for five to six minutes. Then turn off the fire and leave the mushrooms to cool in the liquid. After a while, the champignons can be decomposed into jars and poured with marinade. We put the workpiece for six hours in a cold place, after which it can be served on the table. When serving, mushrooms can be garnished with green onions and herbs. They turn out very tasty - moderately s alty and spicy.
