In winter, you really want different berries! This dream is easy to achieve. It is enough just to save them correctly - and you will always have useful and tasty supplies at home. In this article, we are canning cherries. The recipes are very different - with sugar, without it, berries in their own juice, as well as compote.

Canned cherries

For eight servings you will need 2 kilograms of cherries, 400 grams of granulated sugar and one liter of water.

Preservation process:

  1. Sterilize jars and lids.
  2. Wash the cherries and remove the pits.
  3. Pour all the sugar into a large saucepan and cover with water.
  4. Put the pot on the fire and bring it to a boil.
  5. Turn the heat to medium and continue to cook until the sugar is completely dissolved.
  6. When syrup is in the pot, add all the cherries and boil for five minutes.
  7. Remove the resulting foam.
  8. Fill the jars one at a time with cherries and syrup, leaving a couple of centimeters empty to the brim.
  9. If the edgesdirty, wipe them off with a clean cloth or paper towel.
  10. Close the lids on the jars, but not tightly.
  11. Sterilize jars of cherries for fifteen minutes.
  12. Close lids tightly.
  13. Cool the jars.

Canned cherries are ready!

Cherry in own juice

This jam is made without the use of water, so you need to take only three kilograms of cherries and 400 grams of granulated sugar.

Working order:

  1. Prepare jars and lids for preservation.
  2. Wash the cherries, get rid of spoiled berries.
  3. Squeeze out the bones if desired.
  4. Fill each jar almost to the top with berries.
  5. Pour sugar on top of the berries. There are four tablespoons per serving.
  6. Let the jars just sit for fifteen minutes. During this time, the cherry itself will settle down a bit.
  7. When the berries are firm, add a few more cherries on top to fill the jar.
  8. Take a wide pot and line the bottom with a towel.
  9. Fill the pot with jars of cherries, after closing them with lids.
  10. Pour cold water into a saucepan.
  11. Bring water to a boil and sterilize jars for fifteen to twenty minutes.
  12. Take out the jars and roll up the lids.
  13. Select a secluded corner for jars, lay a towel there, put inverted containers on it. Wrap them with a blanket or large towel on top.
  14. Let the jars cool.

Sugar-free cherries

The berries prepared in this way will taste sour and will be useful not only for creating desserts, but also as the main ingredient for cooking compote.

Making canned cherries without sugar:

  1. Wash the berries and remove the seeds from them.
  2. Prepare jars for preservation.
  3. Fill the jar with berries, making sure to pack the cherries tightly.
  4. Cover the containers with lids.
  5. Take a large pot and line the bottom with a towel.
  6. Place the jars in a saucepan and pour cold water into it.
  7. Bring water to a boil and sterilize jars for twenty-five minutes.
  8. Take out the jars and roll up the lids.
  9. Cool the preservation.

Sugar-free cherries are ready! It is necessary to store such a product in a cool place.

Preservation of cherries in the oven

For ten small jars you will need to take:

  • 3 kilos of cherries;
  • 2 lemons for juice;
  • 4 tablespoons of sugar for each jar (40 total).

Preservation instructions:

  1. Prepare jars and lids for preservation.
  2. Wash the cherries in cold water.
  3. Remove the bones if you like, but it's not necessary.
  4. Fill each jar halfway with cherries.
  5. Sprinkle sugar on top.
  6. Fill the jar with water, butnot to the brim.
  7. Squeeze some lemon juice.
  8. Place the jars, covered with lids, on a baking sheet and put it in a preheated oven at 180 degrees.
  9. Fill a tray with hot water.
  10. Leave the jars in the oven for one hour.
  11. When the water in the container boils, lower the temperature to 150 degrees.
  12. Let the jars rest in the oven for another half an hour.
  13. Take out the jars and let them cool.

Such a drink will be a success throughout the winter, when you really want something tasty and fragrant.

Making canned cherry compote:

  1. Wash the cherries and sort them out (get rid of small berries, they are not suitable for compote).
  2. Pour cold water over the cherries and let them stand for one and a half to two hours.
  3. Make sugar syrup. To do this, dissolve sugar in water and bring everything to a boil (one kilogram of cherries takes half a kilogram of sugar and 400 grams of water).
  4. Pack the cherries firmly into the jar, filling it 1/3 full.
  5. Pour the sugar syrup over the cherries into the jar.
  6. Put lids on jars.
  7. Sterilize the jars. Each volume has its own sterilization time: for a half-liter - 15 minutes, for a liter - 20 minutes, for a three-liter - 40-45 minutes.
  8. Refrigerate jars of compote.

Recipes for possible dishes:

  1. Puffs-envelopes. Make or buy ready-made puff pastry. Open the canned cherries and strain them from the syrup. Roll out the dough sheets and cut it into small pieces. Place a tablespoon of cherries in the center of each. Carefully roll up a piece and place on a baking sheet. Put the baking sheet in the oven preheated to 180 degrees and bake puffs. When ready, take out the envelopes and decorate them with powdered sugar.
  2. Pancakes with cherries. Prepare pancakes and wrap cherries inside. Top with syrup and sprinkle with powdered sugar.
  3. Cake "Winter Cherry". Mix together 3 cups flour, 1 teaspoon baking powder and 200 grams margarine. Add 3 yolks and 200 grams of sour cream. Knead the dough and put it in the refrigerator for a couple of hours. Divide the dough into eight pieces. Whip the remaining whites with 3 cups of sugar. Roll out one part of the dough and grease it with proteins, on which put the cherry. Place the second piece of dough on top. Put everything in an oven preheated to 180 degrees for 20 minutes. Make three more such parts in the same way. Prepare cream. To do this, pour 7 tablespoons of flour into 1.5 cups of milk and dissolve it. Boil another 1.5 cups of milk and pour in the previous one. Pound together a glass of powdered sugar and 300 grams of butter. Add milk with flour to this mass. Grease all the cakes and connect them together.
