However, for this it must be cooked correctly, because otherwise we will not get a tasty meal, but completely inedible meat, which will only be left to give to a pet.
Ingredients
According to the proven recipe for ossobuco steak, it will require ingredients such as:
- kilogram beef shank on the bone;
- medium carrot;
- 3 celery stalks;
- 2 medium bulbs;
- 3 garlic cloves;
- a glass of dry white wine;
- 1, 5 cups of any meat broth;
- 2 sprigs of parsley, thyme and bay leaf each;
- 400 grams of tomatoes;
- zest from one lemon;
- 6 black peppercorns;
- 3 tablespoons vegetable oil;
- 2 tbsp butter;
- 2 tablespoonsflour;
- s alt and pepper to taste.
Preparatory stage
Before we begin to find out in detail how to cook an ossobuco steak, you should start preparing the meat. It is best to buy a semi-finished product in advance in the store - 4-5 pieces of sawn shank with a marrow bone inside. If you can’t find them, you can simply buy meat, and then cut it into 4 identical pieces. Next, the meat pieces should be thoroughly rinsed under water, dried with a paper towel and cut off the films from them. And after that, you should take a thick thread and tie it around each slice of beef around the circumference so that it does not lose its shape. Finally, it remains only to rub the pieces of meat with s alt and ground pepper, and then put them aside for a while.
Prepare vegetables
Before you start cooking the ossobuco steak, you should take care of the rest of the ingredients. The first step is to peel and thoroughly wash the vegetables. Next, cut the onion into quarters, chop the carrots and celery into cubes, finely chop two cloves of garlic or pass through a garlic press. Then we make a cross incision in the tomatoes and scald them with boiling water. After that, it will be easier than ever to remove the peel from the tomatoes, and all that remains is to cut them into large cubes. We pass the garlic through a garlic press, chop the parsley, and cut the zest from the lemon so that there is no white peel, only a yellow peel, which will also need to be chopped. Then all this is mixed, and when the meat is served to the table, all that remains is to sprinkle the finished dish with seasoning.
How to grill an ossobuco steak?
If you have a grill, you can use it to get an even more delicious and appetizing steak. At the same time, such meat will not be tough, it will be tender and fragrant, so you will want to eat it again and again. And we need to prepare it:
- 4-6 pieces of sawn shank with marrow bone;
- bulb;
- a couple sprigs of thyme and rosemary;
- 3 tablespoons vegetable oil;
- 2 garlic cloves;
- glass of mineral water;
- glass of white wine;
- s alt and pepper to taste.
Before cooking the steak, the meat should be marinated for a whole day. To prepare the marinade, chop the onion on a fine grater, add thyme and rosemary to it, pounded with your fingers into a powder, garlic, s alt and pepper passed through a garlic press. Mix everything well to get a homogeneous mass. Then we coat the beef with this mixture and place it in a container, and pour the meat with mineral water on top andwine. Next, close the container and place it in the refrigerator, where it will stand for a whole day. After this time, the pieces of meat will need to be pulled out, dried and wrapped individually in three layers of foil. Then place them on the grill and fry over moderate heat for an hour, turning every 10 minutes. After that, we unfold the foil, pour the juice that stands out into a bowl and put the meat itself on the grill to fry for several minutes, so that a golden crust forms. Before serving, pour over the steak with the separated juice and sprinkle with gremolata.
Oven cooking ossobuco steak
If you want to slightly simplify the cooking process and save time on cooking it, you can make meat in the oven. In this case, we will need all the ingredients that are needed to cook a steak in the traditional way, except for butter, flour and meat broth. First of all, we tie the circles of meat with a thread and clean the vegetables. Then chop the garlic, three carrots and finely chop the onion, celery and herbs. After that, scald the tomatoes with boiling water and cut them into medium-sized cubes as well.
Next, fry the meat in vegetable oil in a non-stick pan for 10 minutes (5 minutes on each side). Then we transfer it from there to a baking dish, and fry the onion, carrot, celery and garlic in a pan for 3 minutes. Then add tomatoes, s alt, pepper to them and simmer vegetables for another 1 minute. Then pour wine into the mixture, increase the heat to maximum andcook for 3 more minutes. Next, pour the vegetable mass over the meat, cover the baking dish with two layers of foil and put in the oven preheated to 180 0C for 1.5 hours. Serve the dish, pouring the steak with the juice, herbs and gremolata.

In order for the ossobuco steak to always turn out as tasty, fragrant and tender as it should be, you should remember some important aspects of cooking:
- The thickness of the steak should not exceed 5 cm and be thinner than 3 cm, as in the first case the meat may be raw, and in the second it will become tough and overcooked.
- Wine for meat, you can take any, but white semi-sweet is more suitable.
- Ossobuco is best served with steamed vegetables and white wine.
- Some people neglect the step of wrapping each piece of meat with cooking twine, which causes it to separate from the bone during stewing, and the steak looks a little strange. So wrapping each piece around the circumference is essential.
