Chaliapin steak: classic recipe
Product List:
- onions - 3 heads;
- spices (pepper, s alt);
- beef tenderloin - 0.4 kg (2-3 pieces);
- refined oil.
Cooking
- Where do we start? Take 2 onions. We take the skin off them. The pulp must be chopped with a knife.
- Chunks of beef beat off with a special hammer. Once one side softens, flip over to the other. Coat each piece with onions. Transfer to a plate. We send it to the refrigerator. There, the meat should be marinated for 1.5-2 hours.
- Peel the remaining onion. Grind the pulp in half rings. We send it to a heated frying pan. Fry using oil. Transfer to a plate. Put in the oven to keep warm.
- Heat the pan again, pouring in a new portion of oil. We clean the marinated meat from onions. Fry beef steaks until golden brown (2-3 minutes on each side). This completes the cooking process. Put the juicy and ruddy Chaliapin steak on a plate. It can be supplemented with french fries, freshsalad or grilled vegetables. We also recommend serving cream or mushroom sauce.
Chaliapin steak with risotto and vegetables
Required ingredients:
- 0.4 kg fresh frozen vegetables (carrots, green beans, green peas and cauliflower);
- 30g piece of butter;
- one bulb;
- beef tenderloin weighing 0.5 kg;
- dried roots - enough 1 tbsp. l.;
- garlic - 4 cloves;
- 200 g of various boiled mushrooms (chanterelle, white, boletus);
- soy sauce;
- a few white peppercorns;
- 100g broccoli and 80g carrots;
- 1.5L stock (chicken and turkey);
- leaf lettuce;
- 300g rice in any shape;
- basil - 2-3 sprigs;
- 70 ml olive oil.
Detailed instructions
Step number 1. Put the beef tenderloin on the table. We take a sharp knife in our hand. Cut the meat into steaks. S alt and pepper each one.
Step number 2. Put the steaks in a preheated pan with olive oil. Fry on both sides. The beef should be golden brown.
Step number 3. Place the steaks on a baking sheet. We put a little butter (a piece) on each of them. Place in preheated oven for 10 minutes. The recommended temperature for roasting meat is 200 °C.
Step number 4. Send the following ingredients to a heated frying pan: grated carrots, onion cubes and chopped boiledmushrooms. Fry it all with oil. Then transfer to a bowl.
Step number 5. Pour rice into the freed pan. Add some of the broth. Cook the rice by stirring it with a spoon. As soon as the broth evaporates, you need to pour more. Add thawed vegetables and chopped broccoli to the pan with rice. Sprinkle with dried roots. S alt.
Step number 6. Pour in the remaining broth. We put the fried mixture consisting of mushrooms, onions and carrots into the pan. We mix. At the very end of cooking, put the grated garlic. Mix again. Close the pan with a lid. Let rice and vegetables simmer for 10 minutes.
Step number 7. Let's start forming the dish. Place a lettuce leaf on a plate. Then comes the vegetable risotto. And Chaliapin's steak completes this composition. Feel free to take 2 pieces per serving. Soy sauce is suitable as a dressing.
Step 8. Decorate the dish with fresh tomatoes and basil sprigs. If desired, you can put grated radish on a plate, sprinkling it with olive oil. If you look at the steak in the cut, you can see how well the meat is cooked. It turns out soft, tender and appetizing.
