First you need to cook the rice. If you find special sushi rice in the store, then you only need to boil it according to the instructions. If not, then you need to weld an ordinary round one using a special technology and add the necessary things to it so that it has the proper taste and texture. Note that store-bought sushi rice and home-cooked rice differ significantly in price.

So, first you need to prepare dressing for rice. To do this, pour a little less than a glass of six percent rice vinegar into a saucepan, pour half a glass of sugar and a teaspoon of s alt without a slide. Turn on the heat to high and stir the mixture with a wooden spatula until everything dissolves. As soon as this has happened and the vinegar has barely begun to boil, add a couple of sheets of nori seaweed there, cover with a lid and remove it from the stove. Now the rice itself. It is best to take round-grain rice, as it is also called in Russia, Krasnodar. It must be washed several times, and then poured with water and left to soak for half an hour. Then you can throw it in a colander and let the water drain for about ten minutes.

Then put the rice in a pan in an even layer, without peas, and fill it with cold water so that the water protrudes 2-3 centimeters above the grits. Cover with a lid and set to maximum heat until it boils (steam starts to break out from under the lid), and immediately reduce to a minimum. Cook for another 20 minutes, then turn off the heat and leave to cool for another 15 minutes. The main thing is not to open the lid during the entire cooking!

Now we spread the rice in a separate form, it is better a baking sheet to pour the dressing. Ignore grits sticking to the bottom of the pan! We level the rice with a spatula and pour dressing at the rate of 200 milliliters per kilogram of cereal. Mix thoroughly, cover with a towel and set to cool. All! You can make sushi with salmon!

Cut the salmon fillet with one movement of a sharp knife slightly diagonally to the fish fibers into the required number of layers. Pour warm water into a deep bowl and throw a couple of slices of lemon. We will wet our hands in it while making sushi with salmon.
