Food foil is an indispensable tool in any kitchen. It is used as a thermos for storing warm or cold foods, used for baking and as packaging for ready meals. But it turns out there are a few rules to follow when using foil. In particular, for a longer preservation of the temperature of the product, it should be wrapped with foil in several layers, pressing them as tightly as possible. Only special food foil can come into contact with food, do not take technical foil.
Many people think that it is extremely important which side to put the foil to the products. Actually there is not much difference. But at the same time, experienced chefs still prefer to press the smooth side to the products for closer contact. There is also an opinion about the dangers of aluminum, from which foil is made. After all, when it comes into contact with products and when exposed to high temperatures, it (hypothetically) can penetrate them. In fact, food-grade foil is used for cooking, which is completely harmless to people, regardless of heating or cooling.
Usually fish or meat is baked in foil. In this case, the products are prepared in their own juice and are obtained with a richer taste. Sometimes the ingredients are not completely wrapped in it, but covered on top according to the lid principle. At the same time, it does not matter at all which side to put the foil, because its function is not to let air through to the contents of the baking sheet or pan. 15 minutes before the dish is ready, it is better to remove the foil to get a golden crust (or at least open it), otherwise it will not be baked, but stewed.
How to bake fish
There are 2 options: cook the whole carcass whole or in pieces (steaks or fillets). In both versions, a tasty, juicy dish is obtained. Which side to put the foil in this case does not matter at all. If the fish is cooked whole, then it is marinated in s alt, spices and lemon juice, greens and lemon slices are placed in the belly, and then wrapped. If pieces are prepared, then each of them is wrapped separately. At the same time, chopped and fried vegetables (bell peppers, onions, carrots), cheese, mayonnaise can be put on top of the fish. Fish is baked quickly - in 20 minutes. So you can cook everything from ordinary mackerel or pollock to trout or salmon.
Foil chicken
Poultry meat is also more tender and juicy if foil is used. Usually they take a whole carcass, grease it with s alt inside and out, sprinkle with spices (you can put a bunch of greens inside), wrap it in 1 layer of foil and bake at a moderate temperature for about 40 minutes. During the cooking process, juice is formed, which can later be used to make the sauce. Which side to put the foil, it does not matter here either. The result will depend on how tightly it will fit to the carcass.
Cooking vegetables
In addition to meat, you can also wrap vegetables in foil for roasting. For further use in salads and other snacks, whole bell peppers, eggplants, and beets are baked. It is important not to use foil for cooking fruits (apples or quince), as vitamin C is destroyed faster in it, and it does not affect the taste in the best way.
