Ingredients:
- 450 g beef (shank, thigh, etc.);
- 1 medium onion, finely chopped;
- 1 medium carrot, finely chopped;
- 1 stalk (rib) celery, finely chopped;
- 15g dried mushrooms soaked in 500ml warm water;
- 1 cinnamon stick;
- 3 garlic cloves;
- a few sprigs of fresh thyme;
- 1 tablespoon tomato puree (paste);
- about 250ml (1 cup) red wine (you can use less);
- 400g canned tomatoes;
- 1 tablespoon orange jam;
- large bunch of fresh parsley or basil leaves, finely chopped or torn;
- s alt and pepper to taste.
Cooking options for beef stroganoff:
- Instead of using a cinnamon stick, use ¼ - ½ teaspoon ground cinnamon to taste.
- White wine or cider will work in place of red wine.
- If you don't want to use alcohol, you canuse 1 tablespoon of balsamic or red wine vinegar.
- Replace fresh thyme with other fresh herbs such as oregano, marjoram, rosemary, etc., or you can use dried herbs.
- Use the juice and zest of ½ orange instead of jam.
How to make beef stroganoff
Start by soaking the mushrooms in warm water. For this recipe, you need to chop them finely. Grind carrots and celery, you can grate or cut them.
Chop the onion:
- Cut the onion in half.
- Start chopping the onion halves at an angle.
Cut each garlic clove into 2-3 pieces horizontally. Take one part of garlic. Cut it into small pieces, starting from the root end and ending with the end of the rod. Do this with each piece.

Chop the meat finely to speed up cooking, then season with s alt and pepper. Place in a large saucepan or saucepan over medium heat. Pour about 1 teaspoon of oil, spread it over the bottom of the pan. When it's hot, add the beef. When the beef is nicely browned, turn it over to the other side. Remove the meat from the pot.
Reduce heat to medium.
Add onions, carrots and celery to the pot, mix with mushrooms, cinnamon stick and cloves. Mix everything together and then simmer everything for 5-10 minutesuntil soft. Add fresh thyme sprigs and garlic, cook beef stroganoff for a few minutes. Put in the tomato puree (paste) and sauté everything for a minute or so.
Pour red wine or any other alcohol. If you are replacing wine with vinegar, you should not add it yet. Let the wine evaporate by half over high heat. The dish should become thick. Put the tomatoes, bring everything to a boil, reduce the temperature to medium and simmer for about 15-20 minutes. If you didn't add wine, now add vinegar.
Bring the liquid to a boil, then place the beef back into the pot. Reduce heat to low, cover and simmer for 1½ -3 hours. Stir the dish periodically.
When the beef stroganza dish is ready, you can add seasonings to taste.
Melt the orange jam and add to the dish. Remove cumin and herb stalks. Add parsley or basil just before cooking.
Serve the dish immediately.
