In Odessa, Moscow and other large cities, wine began to be introduced into circulation, on the label of which the word “Malaga” was intricately displayed. However, this process soon stopped, because the original wine continued to spread and win the hearts of many wine lovers.
Grapes

The ecological situation in the province of Malaga provides an excellent opportunity to grow grapes with a high sugar content. There, the weather really pleases those who are engaged in winemaking - only 45 days a year in Malaga it is cloudy. All other days are exceptionally sunny in Spain. Malaga wine is sometimes called a sunshine drink because of this.
Grapes begin to be harvested only when they are fully ripe. Sometimes they are even left to ripen on the bushes to increase the sugar content. For the same purpose, special solar areas have been created where 11-12 kg of grapes can be placed.
Thus, the prepared grapes can be further used as a material for making wine. Some of the most used grape varieties are Pedro Ximénez, Malvasia, Muscatel and others.
Production
Making Spanish wine "Malaga" is a rather laborious process. The blend consists of three types of wort: wort of the second pressure, first and gravity.
Spontaneity is obtained by draining grape juice through special sieves without mechanical intervention. However, after draining, there is still some material left, so it is also used in cooking. This is the first pressure wort.
By pressing the residual mass, you can also get the wort of the third pressing.
Cooking Methods

After pressing, there is a process that is essential in any method of making wine - fermentation. These three musts are fermented in three different ways.
The first method involves adding alcohol to 8% strength of the product. This allows you to slightly slow down the fermentation process. And when the alcohol content is already between 15% and 16%, fermentation should stop.
The second method involves the preparation of a very delicate wine. And all because the grapes harvested specifically for this wine "reached" on sunny sites.
Wine is then prepared from this must, the technology of which is very similar to the first method described above. Fermentation starts at 8% alcohol and stops at 15-16%.
Worth mentioning is the Malaga syrup, which adds that same viscous cherry color and coffee-resinous tones to the wine. This syrup is obtained by boiling the wort in a special bath, due to which the percentage of liquid in it is reduced by50%.
Alcohol content

Wine "Malaga" according to the alcohol content is divided into three types:
- Naturally sweet (no more than 13% alcohol).
- Liquor.
- Dessert (both liqueurs and desserts do not exceed 22%).
The label must indicate the percentage of alcohol in the composition of the wine, as well as the place of production, the vineyard, the time of fermentation and stay in barrels. If the label says Malaga Massandra, it means that the drink was aged in a barrel for 6-24 months.
