The Uzbek way of making dough is quite simple, so you can easily reproduce it in your kitchen:

  • Mix four cups of sifted wheat flour, 250 grams of boiled water and some s alt.
  • Knead the dough and divide it into several parts. Put the blanks in the refrigerator for half an hour.
  • Roll each piece into a fairly thin layer, then brush them with melted margarine or fat.
  • Roll each piece into a roll, cut it into pieces again and roll it out again.

The more times you repeat the indicated sequence, the more layers will be in the finished dough.

Classic recipe

As we have already said, Uzbek samsa can be cooked in different ways. However, the traditional dish is baked on coals in a tandoor (special oven), and is used as a filling.lamb, fat tail fat and a lot of onions. To simplify the process, we suggest baking samsa in the oven:

  • Make the dough according to the recipe above.
  • For the filling, take 300 grams of lamb or beef fat (focus on your taste preferences), 300 grams of meat, three onions, s alt, pepper and cumin to taste. Dice all ingredients and mix with spices.
  • You can choose any shape for samsa - it can be a square, circle or triangle. Cut the dough into circles or squares, put the filling inside and seal the edges.
  • Place the samsa on a greased baking sheet, seam side down.
  • Beat the egg, brush it on top of the patties, then sprinkle them with sesame seeds.

Bake the samsa until the meat is fully cooked - about half an hour.

Uzbek puff samsa with pumpkin

Delight your loved ones with a delicious seasonal dish. Recipe:

  • Put a spoonful of s alt in a deep bowl, pour a glass of water and break the egg. Whisk the ingredients together. After that, add 500 grams of flour and knead a stiff dough. Put the finished product on a cutting board, cover with a bowl and leave alone for a quarter of an hour.
  • 200 grams of peeled pumpkin cut into small cubes.
  • Chop 70 grams of tail fat and add to vegetables.
  • Zira grind in the palms and put to the filling. Mix the ingredients, add a little vegetable oil, s alt and ground pepper.
  • Sprinkle the work surface with flour, put the dough on it and knead with your hands. After that, fold the layer in half, sprinkle it with flour and repeat the operation again.
  • Roll out the dough fairly thin with a rolling pin, brush the surface with vegetable oil and roll it up. Cut the blank into twelve parts - this will be the basis for samsa.
  • Roll each piece of dough with a rolling pin so that it is thicker in the middle and thinner at the edges. Put the filling in the middle and blind the edges so that the samsa is triangular.
  • Place the pies on a baking sheet.
  • Beat the yolk with a little water and brush it over the baking surface.

In 20 minutes, delicious Uzbek samsa will be ready. Serve pastries with hot or cold drinks.

Samsa with potatoes

This very easy recipe can be used as it is or you can add fillings of your choice. Uzbek samsa, the photo of which you see above, is prepared as follows:

  • Make puff pastry with three cups of flour, 250 grams of water and a little s alt. If you wish, you can purchase the finished product in the nearest culinary.
  • Peel and dice six medium potatoes. Add chopped fat, spices and s alt to them.
  • Roll out the dough and cut into eight pieces. Shape each piece into a circle, place the filling in the center and seal the edges.
  • As usual, brush the surface with beaten egg yolk and sprinklesesame seeds.

Bake the treat for half an hour until golden.

Uzbek Samsa "Lazy"

This unusual dish is easy to prepare for breakfast or evening tea for the whole family. Read the recipe below:

  • Thaw 500 grams of puff pastry, roll it out and cut into 16 squares.
  • For the filling, chop peeled potatoes, sausages and onions. Lightly fry the food in vegetable oil and cool. Toss them with s alt, ground pepper and any spices.
  • Put the filling on the dough and fasten the edges with an envelope. Brush the surface with beaten egg and sprinkle with poppy seeds and sesame seeds.
  • Then place the pies in the preheated oven.

In a few minutes, delicious pastries will show off on your table.

Samsa with minced meat

We want to share with you another interesting oriental recipe. This time we will use a not quite traditional filling. However, this does not spoil the taste at all - it recognizes our beloved Uzbek samsa. We will describe the preparation of the dish in stages:

  • Chop five or six onions, mix them with 500 grams of minced meat, add fat (if any), s alt and spices. Mix all ingredients.
  • Prepare a simple dumpling dough, roll it out and brush with melted margarine or vegetable oil. Roll the blank into a roll and put it in the refrigerator for one hour.
  • When the time indicated by us passes, the roll can be taken out and cut into small pieces. Give the blanks the shape of cakes, put the filling in the center and pinch the edges.
  • Place the "triangles" on a baking sheet lined with baking paper, brush them with egg and sprinkle with black and white sesame seeds.

Pastries should be cooked in a well-heated oven for half an hour. Pies can be served with tomato and spice sauce.

Chicken Samsa

This recipe makes pies tasty and low-fat. Therefore, they can be safely used by those who follow their figure.

  • Prepare the yeast dough and leave it to "reach" under the closed lid.
  • For the filling, take chicken breasts or fillets. Cut the meat into small cubes, mix with chopped onion, cumin and cinnamon. Remember that the more onions you put in, the more juicy the finished dish will be.
  • Divide the dough into small pieces, roll each one out and fill with stuffing.
  • Connect the edges of the blanks, giving the pies the desired shape.
  • Put the samsa on a baking sheet and don't forget to brush the top with the beaten egg. After that, immediately sprinkle the pies with black and white sesame seeds. If desired, you can also use poppy seeds.

Uzbek samsa is cooked in a preheated oven and served hot. As an addition to the dish, you can use homemade sauce.
