Of course, you should start with the fact that tequila is not "cactus vodka" at all. It's not cactus or vodka. This strong alcoholic drink is made from the juice of blue agaves. Outwardly, perhaps, agave is associated with the uninitiated with a cactus, but it is a real desert lily and looks like homemade aloe. However, the ripening period for these lilies ranges from seven to twelve years. By this age, the weight of the plant reaches almost a centner.
The history of tequila is not as old as the history of cognac, but with this French drink it has a number of similarities. Like the name "cognac", this alcohol received the name in honor of the city in which it was produced - Tequila. Like the French, tequila is produced only in a relatively small region of Mexico - in five states. And only a little over a hundred firms from this region have a license to produce this alcohol.
Classification
"Tequila" is the trademark of the internationally recognized Mexican alcoholic drink mezcal. Again, a comparison with French alcohol suggests itself. Like all drinks based on grape spirit (with the exception of cognac)are called "brandy", and any alcohol based on agave (except tequila) is called "mezcal". But here they keep tequila, unlike the same cognac, in an unlike short time.
Aging time for Silver is no more than two months. During this time, alcohol does not have time to gain color, therefore it remains absolutely transparent.
If you add color to silver tequila, it becomes similar to aged and goes into the "Gold" classification.
The next subspecies - for drinks aged in oak barrels for less than a year, is simply called "rested" (Reposado).
If the exposure of tequila is from one, but not more than three years, this type of tequila receives the category "aged" (Anejo). Aged tequila already takes on a natural golden hue.
Most recently - just a decade ago - a new subspecies appeared - extra-aged (Extra Anejo) for strong alcoholic drinks of the Mexican bottling with an aging period of more than three years.
World's second largest producer
The second largest tequila producer in Mexico or in the world - the concepts are identical. After all, the national pride of Mexico is produced only in this country, and its export is an important article of Mexican export. So, the world's second largest producer of this type of alcohol is hiding under the name Sauza tequila. Reviews of Mexican drink lovers around the world give this brand the second place in popularity. The company is named after its founder, Senobio Sauza, who moved to Tequila in the mid-nineteenthcentury and a little later bought a distillation plant. Due to the long maturation of the blue agave, the full-fledged production of Sauza tequila began only in 1888. In honor of this, the plant received a new name - La Preservancia, by which it is known even now, more than a century after the start of production.
The world's first tequila exporter
The name of Senobio Sousa is connected not only with the history of production. The world's first export consignment of alcohol from Mexico was Sauza Silver tequila, however, it consisted of only three barrels. Naturally, at present, the main direction of production is export, while there is a minimum for domestic consumption.
Tequila production
The amount of alcohol for each type of tequila may vary, ranging from thirty-five to fifty-five shares of volume. The usual strength is about the standard forty degrees - common among other strong alcoholic beverages. A distinctive feature of tequila is the presence of at least fifty-one percent blue agave alcohol in its alcoholic component. The remaining parts are mainly occupied by grain (corn) or cane spirits. Perhaps one hundred percent content of fermented agave in alcohol. Blue agave alcohol gives tequila a sweet taste.
Real or Fake
Only an expert can identify a fake by the shapes or volumes of bottles. And what to turnattention to the uninitiated buyer? How to tell if a Sauza tequila is in a bottle or not? First, you should pay attention to the price. Real, made in Mexico, tequila cannot cost less than thirty or forty dollars. Even the minimum exposure. If the price passed the check, then you should study the label. It is worth paying attention to whether the label says 100% agave, which means that the tequila is made exclusively from blue agave. But about all the other inscriptions that include “100%”, but where something else is written instead of agave - “natural”, “natural product” or “Mexican” - we can say with confidence that Sauza tequila is not in this container - a fake. The absence of such an inscription does not matter, because the agave alcohol content must be at least 51%. If the inscription "100%" is not on the label, but it is written - "Sauza. Tequila". How to distinguish a fake in this case? The label must have a HOM quality seal, which is essentially the manufacturer's registration number (and there are, as you know, about a hundred of them). The state of production must also be indicated, and there are only five of them. After all, the authenticity of a bottle of Sauza tequila can be verified by a simple mathematical calculation of the barcode, or by scanning the barcode with an ordinary mobile phone application.
Inimitable taste
The short aging time of tequila should not be embarrassing. Blue agave gives Mexican alcohol an easily recognizable taste - surprisingly mild with a sweet aftertaste. At the same time, tequila is not at allbe sure to cool - taking into account the climatic features of Mexico, it is consumed at room temperature. If you do not abuse large doses, there will be no consequences the next day at all. And let no one be embarrassed by the second place of the trade brand Sauza tequila in the world. If the drink is authentic, it will fall in love with its taste and take its place in the flavor range.
