- The taste and nutritional value of the dish largely depend on the quality of the broth. It is recommended to cook it with chicken, turkey or veal.
- Dough for dumplings should not be too dense. To make dumplings soft and tasty, it should stick a little to your hands.
- If you add finely chopped fresh parsley or dill to the dough, dumplings will turn out more beautiful and fragrant.
- You need to boil the pieces of dough very quickly. It is enough that they float to the surface of the water after boiling, after which the pan with the dish can be removed from the heat.
Ingredients for the dish
To prepare meat broth you will need:
- water - 3 l;
- lean pork (beef, lamb) - 400 g;
- allspice peas - 3 pieces
The ingredients needed for the soup are:
- potato - 3 pcs;
- onion - 1 pc.;
- carrot - 1 pc.;
- garlic - 2 pieces;
- refined oil - 3 tbsp. l.;
- s alt - 1 tsp;
- black pepper - ½ tsp
- parsley - to taste.
For dumplings, you need to prepare the following products:
- egg - 2 pcs;
- water - 50 ml;
- vegetable oil - 2 tbsp. l.;
- flour - 300 g;
- s alt - ½ tsp
Step-by-step recipe for dumpling soup
Even a child can cook this dish. To do this, you need only affordable ingredients that are easy to find in the kitchen of every housewife. The following is a complete step by step process on how to make dumpling soup.
The recipe consists of the following steps:
- Pour 3 liters of water into a suitably sized pot.
- Rinse the meat and put in a saucepan. Also add allspice to this. Then the broth will be more fragrant.
- Put the pot on the stove, bring the water to a boil, remove the foam formed on the surface. Simmer the broth over low heat for 40-60 minutes.
- When the meat is cooked, it must be removed from the pan, cooled and divided into small pieces. After that, they need to be sent back to the broth.
- Peel the potatoes and cut into cubes. Put it in the broth and cook after boiling for 15 minutes.
- Fry finely chopped onion in vegetable oil until soft.
- Carrots can be coarsely grated and added to the pan with onions or cut into circles.
- Send onions and carrots to soup with potatoes. At the same stage, the dish needs to be s alted and peppered.
- Knead the dough for dumplings (how to do it correctly is described in the next subsection).
- Put the pieces of dough into the boiling soup. Cook for 8-10 minutes. They will expand further as they boil.
- Remove the finished soup from the heat. Add chopped parsley and garlic squeezed through a press. Cover the pan with a lid and let the dish brew.
Soup Dumplings
Dumplings can be called perhaps the most important component of this dish. Traditionally, they are made from unleavened dough. Along with this, some housewives prefer to use milk and even kefir instead of water. The process of preparing the dough can be seen in the photo.
Step-by-step recipe for dumplings for soup is to follow these steps:
- Sift 300 g of flour into a bowl.
- Make a well in the center and break the eggs into it. Stir vigorously with a fork.
- Add s alt and stir.
- Pour vegetable oil. When stirring, the flour mass will begin to clump.
- Pour water into the mixture in a thin stream. The dough should be moderately thick. Put it on the table, form a sausage, roll it in flour and cut into small sticks. When cooking, they will definitely increase in size.
If the dough turns out to be liquid, you can take it from the bowl with a spoon (½ tsp each), immediately dropping it into the boiling soup. In this case, the dumplings will turn out more porous and soft.
Dough for dumplings on kefir
Some housewives prefer to cook dumplings based on a fermented milk drink. In their opinion, the dough on kefir turns out to be softer, and the dumplings themselves are tastier. It's worth trying this recipe as well. Perhaps these dumplings will actually taste better.

- Kefir (½cup) warm slightly until warm.
- Add a pinch of soda to it. If you leave it on the table for a few minutes, the kefir mass will begin to foam.
- Crack the egg into a separate bowl and beat it with a fork.
- Add the egg and flour (200-250 g) to the kefir mass. The dough should be moderately dense. On a floured surface, roll it into a sausage. Cut the dough into sticks and dip into the boiling soup.
Yushka Poltava
The name of the next dish in Ukrainian sounds like “yushka with dumplings”. It is no less popular than borscht. In Poltava, they even erected a monument to the famous dumplings. But yushka is the same soup that is made from potatoes, cereals, legumes, vermicelli, vegetables or pieces of dough. It is served to the table with an indispensable dressing - sour cream.
The cooking process consists of just a few steps:
- Bring pre-cooked meat broth (2 l) to a boil on the stove.
- Knead the dough for dumplings: combine flour (1 tbsp.) With egg, s alt and add water (½ tbsp.)
- Roll out the dough to a thickness of 2 cm, and then cut it into squares 1-1.5 cm wide.
- Add 5 diced potatoes and carrot slices to the boiling meat broth. Cook for 5 minutes.
- Add prepared pieces of dough to the yushka.
- Fry the onion in lard (100 g) and send to the pan. S alt to taste and continue to cook yushka for 20 minutes.

Soup with mushrooms and dumplings
The next dish not only tastes good, but also has a delicious aroma. The following soup with dumplings can be prepared according to the recipe with both dried mushrooms and champignons. As a base, you can take meat broth or plain water.
The soup is prepared as follows:
- The broth is brought to a boil over medium heat.
- Potatoes (2 pcs.) are cut into cubes, mushrooms (100 g) into slices, and carrots (1 pc.) into strips. Onions can be omitted from the soup.
- Sliced potatoes are put into the boiling broth.
- Olive oil (30 ml) is poured into the pan. As soon as it warms up, mushrooms with carrots are laid out in it and fried for 5 minutes. Ready fry goes to the broth to the potatoes.
- Knead batter for dumplings from flour (½ cup) and eggs.
- Dumplings are sent to the soup 5 minutes before the end of cooking. For this, small portions of dough are collected with a teaspoon dipped in cold water and dipped into the broth. As soon as the dough leaves the spoon, it must be lowered into the water again, and then a new portion of the dough must be collected.
- After 2 minutes, when all the dumplings float, s alt the soup, sprinkle with herbs and remove from heat.
Soup with meatballs and dumplings
This unusual first course will especially appeal to children. A step-by-step recipe for soup with dumplings (you can see the finished dish in the photo) consistsof the following:
- Boil 2.5 liters of water in a saucepan.
- Peeled potatoes (3 pcs.) cut into pieces. Send it to boiling water and cook in s alted water for 25 minutes.
- Minced meat (200 g) s alt, pepper and mix with half a finely chopped onion. Form meatballs with wet hands and place them separately on a plate.
- Cut the second half of the onion into cubes and fry with carrots in vegetable oil.
- Send the finished frying of vegetables to the pan with the finished potatoes. Add spices for soup.
- Send all meatballs one at a time into boiling water. Cook them from the moment the soup boils for 10 minutes.
- Pour water (5 tablespoons) into a separate bowl, add s alt and an egg. Shake everything with a fork. Add 5-6 tablespoons of flour. The consistency of the dough should be like sour cream. To make dumplings, you need to pick it up from a bowl with a teaspoon and lower it into a boiling soup. The dish will be ready in 3 minutes.
Lenten recipe with dumplings
This soup will appeal to all supporters of a vegetarian diet. It can be served at the table during church fasting, when all animal products should be excluded from the diet. The recipe for making dumpling soup consists of three steps:
- In a saucepan with water (2 l) lower the potatoes (5 pcs.) Cut into cubes. Add whole or chopped carrots and onions here. Boil potatoes for 20 minutes. S alt the water in advance to taste.
- From a glass of flour, 100ml of water and a pinch of s alt knead elastic dough. Form a tourniquet out of it and cut it into pieces.
