Depending on the change of dishes or at the request of customers, they are provided with new and additional items of dishes and cutlery.
In this case, special attention should be paid to the fact that the table setting in the cafe is somewhat different from that which will be offered in the restaurant. The rules for arranging dishes themselves do not change. But cafes can afford tablecloths and napkins of a more modest quality (or do without them at all), a smaller variety of types of dishes, depending onclass and variety of dishes on the menu. Restaurants are more demanding in this respect.
Generally accepted, depending on the presented menu and the type of meal, are four main types of serving:
- tea/coffee table;
- buffet/buffet;
- cold food table;
- dining table (hot dishes).
When serving in a restaurant, a linen tablecloth must be on the table. The same should be and napkins. It is unacceptable to display "variegated" dishes and appliances.
