Initially, you need to choose the type of fish you will cook. Taking into account the fat content of meat, the following varieties can be distinguished:

  • low-fat (pollock, cod, perch);
  • medium fat (sea bass, flounder, mackerel and carp);
  • fatty (trout, salmon).

Usually, housewives choose species in which the fat content is high enough. Compliance with this condition allows you to make a juicy dish. Experienced chefs recommend using marine fish species (salmon, salmon, blue whiting, tilapia). But you need to pay attention to river varieties, among which bream, carp and carp are especially delicious. You can prepare a he althier marinade if you use olive oil, honey, soy sauce, and lemon juice. In some cases, the recipe provides for the addition of fresh herbs. It will be a better substitute for mayonnaise.
  3. Use foil. To get a perfectly tender, juicy and fragrant dish, it will be enough to wrap the fish with your favorite spices in foil. Even inexperienced housewives can do this method of cooking, since it is almost impossible to overdry the fish.
  4. Don't forget the sauces. With the help of the sauce, the fish can be protected from strong heat, and also ensure a crispy crust.

Sea bass with tahini sauce in the oven

Ingredients:

  • seabass (you need a whole fish weighing about 1.5 kilograms);
  • 4 tbsp. l. tahini;
  • 300 grams tomatocherry;
  • 6 art. l. natural yogurt;
  • 100 grams of olives;
  • 6 anchovies;
  • 2 lemons;
  • 3 small garlic cloves;
  • 1 bunch of oregano;
  • 1 tbsp l. olive oil;
  • s alt to taste.

Cooking consists of the following steps:

  1. Carefully clean the fish from scales, and remove all gills and entrails. Three cuts must be made on each side.
  2. Preparing the marinade in a separate small bowl, in which we mix olive oil with anchovies, chopped garlic and chopped olives. Chop half of the oregano and add to the mixture. Mix thoroughly and brush the fish on both sides with the marinade. Put the fish in the prepared form, add the remaining greens and cherry tomatoes. Squeeze the juice from half a lemon, and then sprinkle the contents of the mold with it. Cut the second half into slices and put inside the carcass.
  3. Bake the fish in the oven for 25-35 minutes at 190 degrees.
  4. To prepare the sauce, you need to mix tahini, yogurt, garlic (can be passed through a garlic press) and lemon juice (0.5 fruit will be enough). In order for the consistency to be homogeneous, you need to add water (a couple of tablespoons will be enough).

Serve with sauce and baked tomatoes.

Halibut in garlic-lemon marinade

Ingredients:

  • 450 grams halibut fillet;
  • 6 garlic cloves;
  • 1 tsp dill (usually dried);
  • 1/2 cup juicelemon;
  • 1/2 tsp each red and black pepper;
  • 1 tsp paprika;
  • 3 tbsp. l. olive oil;
  • 1 tsp s alt (choose sea s alt).

Cooking steps:

  1. In a container, mix lemon juice with olive oil, spices and minced garlic. Put the marinade on the prepared fish, soaking it on both sides. Cover the container with the fish in the marinade with cling film. Place in the refrigerator to marinate for 25-30 minutes.
  2. Bake the fish in the oven, preheated to 175 degrees. 20 minutes will be enough.

River fish with cheese and sour cream

A simple river fish baked in sour cream in the oven is incredibly tasty and will certainly become a favorite dish on your table.

Prepared from:

  • 1 kg of river fish (perch, catfish or crucian carp are perfect);
  • 1 bulbs;
  • 200 grams of sour cream;
  • 200 grams of cheese;
  • spice.

Cooking steps:

  1. First, you need to clean the crucian carp, rinse it well, and then make a small incision on the belly.
  2. Grease the fish with sour cream, and put the pre-cooked cheese-onion mixture inside (just mix grated cheese with finely chopped onion). Provided that the carcass is small, the onion-cheese mixture can be added to sour cream, and then grease the fish with it.
  3. Place in a baking dish, which must first be greased with oil. Pour the rest of the sour cream over the fish, add your favorite spices and bake for half an hour.

Pink salmon with tomatoes and sweet potato

The pink salmon fish baked in the oven with tomatoes will be especially tasty if you choose a medium-sized fillet. The sweet potato is a sweet potato that can be substituted for pumpkin if desired. To prepare the dish you will need the following ingredients:

  • 2 large sweet potatoes (or 400 grams of pumpkin);
  • 1 pink salmon fillet;
  • olive oil;
  • garlic;
  • dill;
  • sea s alt;
  • basil;
  • lemon juice.

Cooking steps:

  1. Initially, you need to prepare the sweet potato. It must be thoroughly washed and cut into large rings. Put the sweet potato rings on a baking sheet pre-lined with parchment, and then send it to the oven for 40 minutes at 180 degrees.
  2. While the sweet potatoes are cooking, we start preparing the fish. It must be marinated in a pre-prepared mixture of olive oil with lemon juice, garlic and basil.

Among the many recipes, fish baked in the oven with cheese is distinguished by its delicate taste and ease of preparation. The dish will not leave anyone indifferent.

You will need the following ingredients:

  • 1 kg of fish (you can also cook a carcass in this way, but for a more tender dish, it is recommended to choose a fillet);
  • 3 medium carrots;
  • 3 small onions;
  • 200 grams of cheese (Russian or Dutch will do);
  • mayonnaise;
  • spices;
  • 1 lemon;
  • s alt.

Cooking fish baked in the oven with cheese (steps):

  1. Cut the fish into small pieces. Professional chefs advise giving preference to fillet of marine varieties, since it does not contain small bones. S alt, add spices and drizzle with lemon juice.

  • a pinch of white pepper.

  1. Put the salmon fillet on a parchment-lined baking sheet.
  2. Mix in a separate bowl olive oil with pepper, s alt, garlic,herbs and lemon zest. Using a pastry brush, apply the mixture to each fillet.
  3. Bake the fish in the oven for about 12 minutes at 200 degrees. Checking readiness is very easy. You can do this with a fork. If the fish comes off the bone, it is ready.
