Today we are preparing the legend of Soviet cuisine - "Prague Cake". A chocolate treat for any holiday table. There are many variations of the Prague Cake recipe.

Cake "Prague". Recipe according to GOST
In order for the cake to be as similar as possible to the original, you must strictly follow the recipe for its preparation.
Biscuit Ingredients:
- 115 grams of wheat flour.
- 6 chicken eggs.
- 150 grams of granulated sugar.
- 25 grams of cocoa powder.
- 40 grams of butter.
Cream Ingredients:
- 20 grams of purified water.
- One egg yolk.
- 120 grams of raw condensed milk.
- One pack of butter.
- 10 grams of vanilla sugar.
- 10 grams of cocoa powder.
Icing Ingredients:
- One bar of dark chocolate (it is important that it isno additives).
- 50 grams of butter.
- Ingredients for impregnation:
- 100 grams of apricot jam.
- 100 milliliters of black tea.
- 70 grams of granulated sugar.

If you follow the cooking technology, the biscuit will turn out tender and airy. Food must be at room temperature.
We take eggs. A prerequisite is that they must be fresh, and the shell must be smooth, without any cracks.
First of all, we start whipping the proteins. It is best to do this with a mixer, since we need to achieve a thick foam, and doing this with a whisk is very tiring. Start beating at medium speed. When the whites turn into white foam, we begin to introduce sugar in a thin stream, while continuing to stir. After that, it is necessary to increase the mixer speed to maximum and beat until a thick protein foam is formed. In order to understand that the foam is the right consistency, turn the container over. Well whipped foam will not run out.
For better whipping, add a few drops of lemon. After that, we proceed to the procedure of whipping the yolks.
In a separate container, combine sugar and yolks. Beat with a mixer at medium speed until a fluffy mass is formed.
At the next step, we combine the already whipped yolks and whites.
In a separate containermix already sifted wheat flour and cocoa powder.
After adding it to the whipped whites with yolks. This should be done gradually, while gently mixing with a spatula so that lumps do not form. Stir from top to bottom.
Now add butter. It should be at room temperature.
Mix in the same way as the previous ingredients.
Baking a biscuit
In order to bake a biscuit for the "Prague cake", you need to prepare:
- Parchment paper.
- Baking dish (in our case, the diameter of the form is 21 centimeters).
Preheat the oven to 200 degrees. We put parchment paper on a baking sheet, place the form on it. Pour our dough and send it to the oven for 30 minutes.
If you are unsure if the cake is done, check with a skewer or toothpick. If the skewer is damp after piercing, leave to bake for another couple of minutes. Remember: the biscuit should not be baked for a long time so that bubbles do not appear.
After we take out the cake, leave it for a few minutes in the form. After that, it must be removed. Cover the sponge cake with a towel and leave at room temperature for about eight hours or overnight.

Preparing the cream
First, prepare the syrup. To do this, pour 20 grams of water into a small container. Add egg yolk and mix well. After that, add condensed milk, a little vanilla sugar. Mix all the ingredients well.
We send the container to the stove on a small fire so that the syrup does not boil. It must be boiled until it thickens. Stir constantly. Once syrup is ready, remove from heat and set aside to cool for half an hour.
At the next stage, soften the butter in a separate container and beat it with a mixer. This must be done for five to seven minutes at medium speed. The result should be a lush creamy mass.
After the syrup has cooled, we introduce it into the oil mass in a thin stream, stirring constantly.
At the next stage, we color our cream in a dark color with cocoa. To do this, we introduce the already sifted cocoa powder into the cream, not forgetting to constantly mix. Adjust the amount to your liking. The more you enter, the darker the cream will be.
Impregnation for cake
Preparing the impregnation according to the classic recipe will not be difficult. In this case, it is necessary to dissolve 70 grams of sugar in one hundred grams of strong black tea without flavorings.
Glaze
It must be cooked after the cake is assembled so that it does not freeze. To do this, you need a bar of dark chocolate and butter. Melt both ingredients in a water bath. We make sure that the oil does not exfoliate, otherwise you will have to redo it and throw away the old ingredients. To prevent the glaze from spreading over the entire surfacecake, the top layer can be sprinkled with starch.
Assembling the cake
After all the ingredients are ready, we assemble the "Prague Cake" step by step.
Step one. We cut the cake into three identical parts. This can be done with a large knife, or you can use a thread that we stretch along the entire length of the cake. Instead of a thread, a fishing line can come to the rescue. But we must warn you that this procedure is not easy and not everyone will succeed the first time. However, the more often you cook the cake, the better it will be to divide the cakes into equal parts.
Step two. Put the first layer on a dish and evenly grease it with cream with a spatula. We do the same with the rest of the cakes. Their number depends on how high the torus you decide to cook.
Step three. The last cake must be soaked with apricot jam. Do not forget each of the cakes, before smearing with cream, water with tea-based impregnation. After that, we send the cake for half an hour in the refrigerator.
Step four. Cover the cake with chocolate icing. This should be done with a spatula, smearing well on all sides. You can decorate with crushed nuts or chocolate cobwebs.
We send the finished cake to the refrigerator so that it is completely soaked.
Prague cake based on vodka
Cooking a cake according to a recipe slightly different from the classic one.
For its preparation you will need:
- One glass of sugar.
- Two cups of flour.
- One 200g glass of sour cream.
- Twochicken eggs.
- Five tablespoons of cocoa.
- Half a glass of vodka.
- One teaspoon of baking powder.
- One bar of chocolate (better to choose black).
- One pack of butter.
- One can of condensed milk.

Step one. Beat eggs with sugar, add one hundred grams of condensed milk and sour cream. Whip for a few more minutes. Do it better with a mixer. Sift flour and cocoa into a separate bowl. Add to the whipped mixture and gently mix with a spoon or spatula from the bottom up.
Step two. We heat the oven to 200 degrees. Grease a baking sheet with butter. We expose a baking dish with a diameter of 25 centimeters. Pour the finished dough into it and bake for half an hour.
Step three. Cooking cream. To do this, beat the butter, with cocoa and the remaining condensed milk until a thick airy mass is formed.
Step four. We take out a ready-made biscuit on a damp towel. Top dry. Let it cool down for a couple of hours. After that, cut the biscuit into three equal parts.
Step five. Impregnation of cakes. We do it with vodka. You can use any other alcohol. It could be amaretto, cognac.
Step six. We form a cake. We spread the first cake on the cake dish and grease it with a ready-made cream. We put the second cake on it and do the same with it. The top layer does not need to be smeared. We will water itfrosting.
Step seven. Preparation of glaze.
In a water bath, melt the broken dark chocolate into pieces and grease the cake immediately. After that, we send it to the refrigerator for three hours.
Cake decoration
Already soaked cake is taken out of the refrigerator for decoration. To do this, finely crush the frozen remains of chocolate. Fry the peeled walnut in a pan and also chop. Instead of walnuts, you can use hazelnuts or hazelnuts.
