How Artek waffles are made according to GOST

To do this, first, flour is sifted into a special container, then water and a dry mixture of baking powder and soda are added to it. Everything is thoroughly mixed. The dough should be no thicker than regular sour cream.
After that, white powder - lecithin, is poured into the mixed mass, and then vegetable oil is poured in. They will make the dough homogeneous in composition. No other ingredients are added. Contrary to popular belief, there is no sugar in waffle cakes, it is the filling that makes them sweet.
After kneading, the dough goes through the pipes to the next shop, where the cakes are baked. The equipment required for this, according to the principle of operation, resembles an ordinary waffle iron. Through special nozzles, the dough is poured onto hot plates, covered on top with the second half of the waffle iron and baked for 2 minutes at a temperature of 170 degrees.
Now the finished cakes are cooled and get to the workshop along the conveyor belt, where a liquid filling is applied to them through special nozzles. After that, the wafer sheets are connected to each other. Then they are cooled in a special refrigerator so that the filling freezes. And only after that, large sheets are cut with special strings into small wafers. Then they are packed and sent to the warehouse, and then to the store.
