How to make this dessert?
In a medium bowl, beat the yolks and egg until smooth. In a separate bowl, mix 70 grams of sugar, cornstarch and s alt. Add the mixture to the eggs and beat until smooth.
In a medium saucepan, heat the milk, butter and remaining sugar, bring to a boil, stirring to dissolve the sugar. Pour the milk mixture in a slow stream into the egg mixture, whisking constantly. Pour this mass into a saucepan and cook, stirring all the time, until it thickens and begins to boil. Boil for 30 seconds, whisking constantly and quickly with a spoon to break up any lumps and remove starch flavors.
