What can you write interesting about "Capital"? A dish familiar to everyone since early childhood, like the Olivier salad, has undergone numerous changes and variations in every family.
The recipe and technological map of the Stolichny salad were indeed known to all women living in the USSR. They proudly passed the recipe on to their daughters and granddaughters.
And although everyone really knows the taste of salad, many interesting points remain unsolved until now.
What is the difference between Stolichny and Olivier salads?
Before you start comparing these two completely different recipes, you need to indicate which particular variation of Olivier will be used in it. Our favorite and painfully familiar salad recipe with green peas, boiled sausage, pickles, potatoes and mayonnaise eggs has similarities with the original creation of Lucien Olivier, but is not the original.

Before delving into the history of the creation of the dish, it is worth noting one important point. In the seventies, not a single Soviet person thought of the obvious similarity of these two salads. Why?
History of occurrence
Salad "Capital" is a product of exclusively Soviet chefs who simplified the recipe by replacing the meat of one bird with another. In this case, the substitute is chicken.
In those distant times, the name of a French chef could only sound like a curse in the kitchen of a familiar Soviet canteen. This is how the proud and unknown name in Western countries appeared. "Capital".
The first technological map of the "Stolichny" salad was born thanks to Lucien Olivier's student, Vasily Yermilin, the chef of the Moskva restaurant. The latter, changing some ingredients, took into account the deplorable economic state of the post-war period. Of course, there could be no talk of any hazel grouses and cancer necks. The recipe was supposed to be available to every Soviet person.
Yermilin did it. The worker-peasant class liked the Stolichny salad. The classic recipe with chicken quickly spread all over the country, and the dish became a welcome guest on the festive table in every family.
At about the same time, another familiar salad with doctor's sausage and green peas appeared. However, it was not called “Olivier”, but “Moscow”.
In a cookbook published in 1955, you can find a detaileda recipe for every Soviet housewife.
The modified technological map has been implemented in all buffets, canteens, restaurants and snack bars of the country. The dish was traditionally served in a bowl decorated with chicken strips, eggs and herbs.

- Boiled medium potatoes - 2 pcs
- Fresh lettuce.
- Provencal mayonnaise for dressing.
- Dill, parsley or other greens for decoration.
- S alt to taste.
Chef's Tips: how to make Capital salad?
Chicken breast or any other part of the bird must be cut across the grain.
Many housewives try to cut eggs and potatoes smaller, but cooks recommend carefully chopping only cucumber, which adds a special flavor to the salad. But eggs and potatoes are perfectly acceptable in the form of medium cubes.
If parsley serves not only as a salad decoration, but also as an ingredient, -it is desirable to cut it as small as possible.
Crab meat or crayfish tails can be added to the salad as desired. In no case is it recommended to add cheaper crab sticks to the salad, as they spoil the taste of the dish.
Carrots are also present in some recipes, but their presence is not essential.
Technological map of the salad "Capital" has never included green peas, smoked chicken, pork and sausage in any form and manifestation.

Salad "Capital": cooking technology in different countries
Of course, this salad is liked not only by residents of the post-Soviet space, but also by foreigners. It should be noted: the technological map of the Stolichny lettuce in each country has its own variation. And the common name, but not “Olivier”, and not “Capital”, but “Russian”.
Bulgarians love this salad recipe with salami. In Romania, not far from us, they love this salad very much, but they cook it not with poultry, but with the addition of meat. Basically with beef. For some reason, the Poles generally crossed out meat, sausage and game from it. Instead, the recipe contains celery and an apple. A similar composition without celery but with bell pepper can be seen in Puerto Rico.
Calorie content and doctors' opinion
Salad "Capital", the composition of which cannot be called either light or simple, causes ambiguous and contradictory opinions of critics,nutritionists and doctors. All its harmfulness lies in the large amount of mayonnaise and the fact that the dish is too heavy as a snack.
It is categorically not recommended to start a buffet table with Olivier! The salad is very heavy and will not help digest food. It is especially dangerous not only to start a meal with it, but also in this case to accompany such a heavy meal with alcohol.
During a dense family feast, start dinner with protein food and do not lean on Stolichny and Olivier salads!
If desired, you can make a light version of the salad by excluding potatoes from it and adding carrots.
