Before there were no supermarkets, the teriyaki chicken recipe was prepared by hand by a chef who had his own recipe with exclusive grams of ingredients, perfect for a particular meat or side dish.

Recipe 1. Chicken in sauce

Since every country in Asia has its own recipe for chicken in teriyaki sauce, let's consider the simplest and most classic. The basis of this recipe:

  • equal slices of chicken fillet;
  • teriyaki sauce (handmade or store bought).

Consider the necessary ingredients for a classic recipe. Needed for 1 serving:

  • 1, 5-2 kg chicken fillet;

  • 2 spoons of honey;
  • fresh ginger, grated;
  • 1 head of garlic;
  • 2-4 tablespoons of sesame oil;
  • 200 ml boiled water.

Teriyaki chicken, if you follow all the rules of oriental culinary specialists, is cooked in a wok-pan. If it is not in the kitchen, then you need to purchase it. So, you can go to cooking. You can divide the cooking process into 3 stages:

  • preparing the sauce;
  • marinating meat;
  • roasting.

Let's start with step 1. To make the sauce you will need:

  • Combine honey and soy sauce and stir until honey is completely dissolved. If the honey is very thick, then to speed up the process, you can put a mixture of soy sauce and honey on fire for several minutes.
  • Next, add pepper, vinegar and grated ginger to the honey-soy mixture. The future sauce must be thoroughly mixed and set aside for 10-15 minutes so that the taste opens up and acquires the desired notes.

While the teriyaki chicken sauce is infusing, you can proceed to prepare the meat for marinating:

  • Chicken fillet must be thoroughly rinsed under water before cutting.
  • Nextyou need to dry it with paper towels or wait until the water drains.
  • It is recommended to cut the washed meat into small slices of equal shape and size.

When the sauce is infused, you can proceed to pickling chicken meat:

Best vegetable options for this recipe:

  • carrot;
  • string beans;
  • sweet pepper.

Required ingredients:

  • 5-6 tablespoons teriyaki sauce;
  • half chicken breast fillet;
  • 1 piece carrots;
  • pair of onions;
  • 3-4 tablespoons vegetable oil;
  • a handful of sesame seeds to serve.

To reduce the cooking time of teriyaki chicken, you can take ready-made sauce in the supermarket. Chicken fillet must be cut into smallpieces (such that they fit in the mouth and it is convenient to eat them with chopsticks). The resulting pieces should be poured with sauce and left for a while.

The time depends on the concentration of the sauce: the thicker it is, the less you need to marinate. While the meat is infused, you can cut the vegetables: carrots into strips, and onions into half rings. But in fact, the shape of vegetables will not affect the taste, so you can cut as convenient.

Before frying, heat the wok with oil to a temperature hotter than medium, but not until the oil boils. On such a fire, onions and carrots are fried. This process usually takes one and a half minutes. As soon as the vegetables are ready, they are removed with a spatula or slotted spoon on a plate. Without turning off the heat and without pouring out the oil, fry the chicken for 3-4 minutes until golden brown. Then add vegetables and marinade to the chicken and cook until the sauce thickens and caramelizes the chicken pieces. This dish is served both with rice and as an independent dish.

Recipe 3. Teriyaki chicken with ginger

To prepare a delicious dish with ginger and chicken, you need to have the following ingredients:

  • 4 chicken breasts;
  • 3 tbsp. spoons of Japanese sake;
  • 3 tbsp. l. thin soy sauce;
  • 1 teaspoon sugar (preferably brown);
  • 2 tsp ginger;
  • onion - 3 tablespoons;
  • long grain rice - 2 cups.

Cooking chicken with ginger

First, rinse the chicken under water and dry it well. With the help of a culinary hammer, you need to makefillet chop about 1 cm thick. In a deep bowl, mix all the ingredients for the teriyaki sauce, pour in the soy sauce and mix until the sugar is completely dissolved. Add the meat to the marinade and leave for an hour. After half an hour, you need to turn the fillet on the other side.

While the meat is marinating, you can do rice. It is cooked for 11-13 minutes. After the water is drained, onion and ginger are added to the rice. The rice pot is covered with a lid and set aside.

Meat is placed in a heated pan with oil and fried for 4 minutes on each side, then laid out on a plate. Add the marinade and a third of a glass of water to the oil, bring the mass to a boil and place the chicken there. The fillet is prepared in this form for 5 minutes.
