If there is no crab meat, then do not replace it with crab sticks. This will greatly affect the taste. With this option, it is better to use shrimp.

Avocado can be replaced with cucumber, and Japanese mayonnaise can be replaced with curd cheese.

Ingredients:

  • rice 350g;
  • rice dressing 80-100g;
  • bamboo mat;
  • nori sheets;
  • crabmeat/shrimp;
  • avocado/cucumber;
  • curd cheese/Japanese mayonnaise;
  • caviar;
  • water 360 ml;
  • food wrap.

Cooking:

Rice is boiled first. While it is cooking, prepare all the other ingredients. It is better to wrap the mat with cling film. This will facilitate the process of forming rolls, and then the process of washing the mat.

Next, sheets of algae are prepared. For these rolls, the sheets are divided in half. If half of the roll does not work, then the sheet can be divided into 2/3.

Avocado should be peeled and cut into pieces or strips. Defrost crab meat, remove all solid partitions, chop into strips. When everything is prepared, we begin to create.

Important! If the plans include "Uramaki" rolls (those with rice on top) with sesame or tobiko, then at this stage it is necessary to sprinkle the rice with sesame or tobiko. If you are preparing Philadelphia-type rolls, then you do not need to sprinkle rice with anything.

Evenly cover rice with caviar. After that, the nori sheet is turned over, for this you need to help yourself with the second part of the mat. Then it is turned over with rice and seaweed, it is better to hold the mat with your hand. The top of the makisu is removed, leaving the rice on the bottom and the nori on top. The filling is laid out in the middle of the nori.

"California" consists of crab meat, Japanese mayonnaise and avocado.

Now the roll is rolled with makisu. How to twist? You need to lift the edge of the mat with one hand, and hold the filling with the other. Thus, you need to wrap the roll until the edges touch. Now, equally pressing on the roll in the mat, it needs to be rolled several times to give density. The shape is chosen as desired: square, triangular, round.

Roll is divided into six or eight parts. It is cut either with a special sushi knife or with the sharpest possible hot knife. In order for the pieces of the roll to remain whole and even,before each subsequent cutting, the knife must be cleaned of the remains of curd cheese / mayonnaise and rice.

To make everything beautiful, first the roll is cut in half, then both parts are folded in a row in width and cut into 4 parts each.
