In practice, it turns out that rye noodles are no less tasty than classic ones, and it is quite easy to cook them at home.

Compared to conventional wheat flour, this product contains more minerals and fiber. Although they do not differ much in calorie content, the benefits of rye flour are much greater - it is recommended as an element of dietary nutrition and for the prevention of diseases of the gastrointestinal tract.

  • Japanese rye flour noodles - 250 grams;
  • chicken breast - 200 grams;
  • vegetable oil - 3 tbsp. spoons;
  • bell pepper - 1 pc.;
  • zucchini (in extreme cases, a young zucchini) - 1 pc.;
  • green onion - 5 pcs;
  • onion - 1/2 pc.;
  • chili sauce - 250 ml.

Cook the noodles in boiling water for 5 minutes. Rinse with cold water, let drain.

Cut chicken meat, zucchini and pepper into thin strips, onion into half rings and green onions just smaller. Place a deep frying pan over medium heat, heat it up and add the oil. Add the meat and vegetables to the skillet, stirring continuously until the chicken is done and the vegetables are browned. Pour in the chili sauce and bring to a boil.

Spread the noodles on plates, top with chicken and vegetables. Serve immediately.

  • chicken eggs - 3 pcs.;
  • s alt - 1/2 tsp;
  • water - 120 ml;

Sift the flour on a work surface, make a small indentation in it. Beat in the eggs one at a time and, adding water, start kneading the dough. Knead the dough for 10 minutes until it becomes firm and no longer sticks to surfaces. Important! Make sure that the mass is homogeneous. Put the dough back into the bowl, cover and let rest for half an hour.

After that, divide the mass by threeparts. Roll out each one very thinly. Leave the resulting layers in the open air for half an hour so that the noodle dough dries and hardens.

Now you can cut the noodles to the thickness you need.

If you plan to serve it as a side dish, then boil it in the same way as classic pasta, then season with butter.

Noodles can also be used in soups. For example, she will show herself perfectly in mushroom broth:

  • rich mushroom broth - 2 liters;
  • boiled mushrooms - 300 grams;
  • vegetable oil - 3 tbsp. spoons;
  • s alt - to taste;
  • pepper - to taste;
  • rye flour noodles - 1/3 serving from recipe above;
  • your favorite greens to taste.

Cook the noodles, boil them and set aside. Place mushroom broth over medium heat. When it boils, add oil, s alt and pepper. Finely chop the mushrooms, add to the broth along with the already prepared noodles. Stir.

Pour in finely chopped greens and remove from heat. Let sit for 5 minutes and you are ready to serve.

Easy Seafood Rye Noodles

For those who do not like to be content with semi-finished products and at the same time have neither the strength nor the desire to stand at the stove for hours after work, this recipe:

  • dry buckwheat noodles - 200 grams;
  • peeled shrimp - 300 grams;
  • processed cheese - 300 grams;
  • water - 1 cup;
  • soy sauce - 3 tbsp.spoons;
  • s alt - to taste;
  • pepper - to taste.

Boil the noodles until tender, rinse and drain.

Put a deep frying pan over medium heat and add the cheese, soy sauce and water. Stir the mass with a whisk until all the sauce has dispersed. Add shrimp to sauce, cook 3 more minutes.

Final step: rye noodles are sent to the shrimp, mixed and served to the delight of loved ones. If desired, shrimp can be replaced with chicken fillet.
