  • Pour the sugar mass onto the silicone mat and start forming a soft lump out of it. You need to do this first with a rug, and then with your hands. Be sure to wear gloves or you risk getting burned.
  • Take the caramel in your hands and start stretching it. When it turns white and you hear characteristic clicks, proceed to the formation of the cane.
